Menu Plan Monday: January 25, 2010

Is it nearing the end of January already? My how time goes so quickly. And my, I have got to get myself in gear if I want to have all of the blogaversary plans in place by the end of the week! Yikes!

So we are still working on the Eat from the Pantry Challenge. I MUST tell you that the KEY to SUCCESS when doing a challenge as this one is don’t send your husband to the grocery store! (I asked him if I could post that. He said yes). In his defense, he did call to ask me if he could spend money on lunch meat supplies for himself for the week. He also guaranteed me that he was being frugal, which he was. He actually bought packaged deli meat instead of the expensive behind the counter kind which I know is his preference. Really, can you be upset with him if he is at least “getting it”? I can’t. I love the man. And I am SO glad that he is starting to come to my side of the shopping adventures.

So where does this week leave us? Well, as of last week we had $25.08 to spend the rest of the month to make the $60/month goal. Hubby spent $22.48 on his shopping trip. That leaves us with $2.60 for this week. Yep, we are going to go over! That is okay with me though because $60 for the entire month was an ambitious goal for us. We are still eating through the freezer which is good and spending less. That is the purpose, right?

So here is how we will be eating this week:

Menu Plan Monday

Monday – OAMM’s Mom’s Spaghetti Sauce, vegetable, wheat bread

Tuesday – Chicken/Broccoli over rice, salad

Wednesday – Dinner with House Church Family

Thursday – Carole’s Chili (September Menu)

Friday – Out to dinner with #Bigdealmoms & shopping for Blissdom! Hubby eating leftovers

Saturday – Lunch – Sausage Biscuits & Gravy, fresh fruit

Dinner – Chicken Parmigiana (February Menu), easy garlic bread, peas

Sunday – Lunch – Burritos (April Menu), Mexican rice, tortilla chips

Dinner – Beef Stew, dinner rolls, salad
