Menu Plan Monday – Lisa

One full week into the new year – can you believe it?! Back into the full swing of things in our house! Big kids are back at school, and daycare kids are returning to their normal schedules……ahhhh….can you hear this mom’s huge sigh of relief?  I am gearing up for a OAMM cooking day, so trying to clear out my deep freezer and my fridge freezer of things that need to be eaten! One of my personal goals for 2012 is to have menu planning become a weekly habit, not just something that I do every so often.  I find myself planning, do great for a few weeks and then fall back into the chaos.  When I do menu plan, it not only saves us money, but also saves me the frustration of figuring out what ‘s for our next meal.

Menu Plan Monday

Monday -

  • Toddler Lunch – Turkey sandwich with wheat bread & cheese, apple wedges
  • Dinner - Chicken Supreme

Tuesday -

Wednesday -

  • Toddler Lunch – Scrambled eggs, pancakes, orange slices
  • Dinner -Grilled chicken salads (red leaf lettuce, baby spinach, red onion, cucumber, tomatoes, mushrooms, grilled chicken pieces)

Thursday -

Friday -

  • Toddler Lunch – Chicken & cheese quesadillas with sour cream & salsa for dipping, corn, fruit cocktail
  • Dinner – Pizza Night!!  Homemade pizza crust, Toppings: ground beef, ground sausage, red onions, mozzarella cheese, cheddar cheese

Saturday – Lunch – Leftovers!

Dinner – Grilled cheese sandwiches on multigrain bread with american and provolone cheeses, tomato soup

Sunday – Lunch – Quick sandwiches after church – multigrain bread, american or provolone cheese, sliced turkey, mayonnaise, lettuce

Dinner – Turkey, Buttery Garlic Knots,

    Hi, Lisa! I try to plan my meals a week at a time, too. In fact, this week, I’ve tried planning two weeks ahead, so I can make sure to have groceries for the first day or two of the week next week, as I’m hoping my grocery day will change come next week.

    I am really interested in those grilled chicken salads. They sound delicious! But do your younger kids eat them well? I think my 2yo would love them, but not so much my 5yo. Do you have an alternative in mind for the younger ones, or do you expect them to eat what is set before them? I tend to be one of the “eat what we’re having” moms, but I also know I need to try to include something they enjoy. I guess, if nothing else, my 5yo might like the chicken and spinach part, anyway! :)

      Christina-
      We are very much a family that doesn’t do “made to order”. We all eat the same thing, no exceptions. My kids are a little older, the youngest being 5, but when we do grilled chicken salads, we will typically do their’s with popcorn chicken and ranch dressing. The other thing that we do is to make it more of a “make your own salad” night. I will chop the ingredients and put in serving bowls, and then they get to choose what toppings they prefer. Another thing I like to do is to buy the chicken when it is on sale, then grill up 5-10 lbs at a time, chop up, and freeze – that way you have your grilled chicken ready for a salad anytime!
