Menu Plan Monday: Recovery Edition

Upon reading the title you might just jump to thinking that I am recovering because we had a menu launch this weekend which is ALWAYS a bit hectic. (By the way, I hope you have checked out our October freezer cooking menus, they are full of Fall favorites your family is sure to love! And with a menu for every eating style, diet, whole foods, traditional, gluten free dairy free, and vegetarian, you really can’t go wrong.) The real reason it was hectic around here is that I (Tricia) had a bit of an outpatient surgery on Friday and spent the weekend resting in bed.

Now I knew it was coming so I did what any good freezer cook would do, I filled the freezer! It was a bit crazy and I questioned if I was going to secretly be on that show about people that have babies when they don’t know they are pregnant as my cooking resembled that of a 9 month pregnant nester! Alas, I am not. :)

At any rate, I made up a slew of meals because I just wasn’t sure how long I would be down and out and I didn’t want my family to be without great meals. Here is what I ended up cooking up for the week (and beyond).

So you can see why it appeared that I might be nesting? Gee whiz! In my defense, I wasn’t planning on the chicken items but our favorite butcher had them at a price I couldn’t pass up, so I didn’t. {Blush} Anyhoo, our week of meals is going to be easy peasy now, wouldn’t you say?

Monday -

Tuesday -

  • Toddler Lunch – Macaroni & Cheese, green beans, apple slices
  • Dinner – leftovers

Wednesday -

  • Toddler Lunch – Chicken Fingers, cheese sticks, grapes
  • Dinner – Beef Stroganoff, green beans, easy garlic bread

Thursday -

  • Toddler Lunch – PB&J packed lunch
  • Dinner – Slow Cooker Soup – haven’t decided yet – which is your favorite?

Friday – Dinner – Dinner with family

    Saturday – Lunch – leftovers

    Dinner – Slow Cooker Chicken Stew, rice, pot stickers

    Sunday – Lunch – Lunch with Church Family

    Dinner – Oven Fried Chicken, special potatoes
