Menu Plan Monday – VeganMoFo Edition
October is Vegetarian month and also VeganMoFo (Vegan Month of Food), where more than 800 bloggers pledge to post vegan meals throughout the month. I’m participating for the first time this year over at Veggie Converter and while it’s certainly been challenging at times (I’m normally a not terribly finicky vegetarian who chooses not to eat meat just because I don’t like it), it’s also been a lot of fun to try new things and experience the ins and outs of a more strict meat-, egg- and dairy-free diet. So, this week my meal plan is full of vegan delights for dinners as well as a few vegetarian treats for lunch as VeganMoFo nears its end.

- Toddler Lunch – Peanut Butter and Granola roll-ups, Broccoli and Veggie Dip
- Dinner – Chickpea Pot Pie
Tuesday -
- Toddler Lunch – Zucchini Burgers
- Dinner – P.F. Chang’s Lettuce Wraps
Wednesday -
- Toddler Lunch – Spaghetti Fritters and Pumpkin Cream Cheese Muffins
- Dinner – Slow Cooker Taco Soup {Vegan}
Thursday -
- Toddler Lunch – Taco Roll-ups {Vegan}
- Dinner – Green Bean Carbonara {Vegan}
Friday -
- Toddler Lunch – Buffalo Chickpea Pizzas
- Dinner – Vegan Arroz con Pollo

My family had 2 weeks of no-meat meals. And I found out a couple of things. One I lost weight and two I felt my mind being much clearer. So now I have a few days of no-meat. It’s also recommended for chronic pain patients to increase their vegetable and produce intake to lessen their pain over time. (I’ve been suffering for 11 years)
