I already have tons of apples, pumpkin and cranberries aplenty in my kitchen. I’m such a Fall junkie, I just can’t help it. Fall and Winter and all those harvest holidays can be difficult for vegetarians (and I can’t imagine how tough for vegans) without a lot of forethought and preparation. But, with considerate (and maybe adventurous) relatives, we can enjoy awesome main dishes, too, and not just a smorgasbord of side dishes.
