Lemon Poppyseed Muffins
Our family is following along with Get Real this year and we’re making great progress so far. We even took a trip to Bread Becker’s this weekend and bought a bucket of sucanat (sugar cane, natural) to use in our baking as well as a bucket of gluten since we’re going to be making more of our own seitan “meats” at home. It’s pretty exciting and, as we’ve discovered, an even tastier experience than we expected. In our family’s pantry purge, we found a bag of instant Lemon Poppyseed Muffins and decided to compare them to our homemade muffins. The homemade version was incredible while none of us were big fans of the instant variety. That Get Real Muffin Comparison really encouraged us to keep up with our progress.

- Dinner – Pumpkin Black Bean Enchiladas with Easy Homemade Enchilada Sauce

- Toddler Lunch – Pumpkin Oatmeal {Vegan}
- Dinner – Baked Seitan Pepperoni Pizza made with Kelly’s Pizza Dough
Saturday -
- Lunch – Grilled Polenta Cakes
- Dinner – Chickpea Broccoli Alfredo
Sunday-
- Lunch – Pear Gorgonzola Pizza
- Dinner – Vegetarian Arroz con Pollo

I keep meaning to try making my own seitan. How interesting the pepperoni is! I’m just afraid DH would be all weird about it. I should just do it!
My DH turned his nose up a bit at it too, but the kids and I love it by itself as a snack. DH likes it on pizza smothered with cheese, though.
