Happy Memorial Day everyone! I hope you’re enjoying your barbecues and get-togethers. As a vegetarian/meat-eating blended-eater family, barbecue holidays are always a bit of a challenge. Especially now that we’re Getting Real and we can’t just toss some veggie dogs on the barbecue! Sometimes Mr. Meaty and the kids have all-natural uncured hot dogs, while I have something else. This year I’m opting for Vegetarian Chipotle Vidalia Burgers, made with delicious seasonal Vidalia onions and a delicious yogurt sauce filled with home-smoked chipotle peppers.

Monday -
- Toddler Lunch – Fire Roasted Corn Salsa quesadillas

Chipotle Vidalia Burgers
- Dinner – Vegetarian Chipotle Vidalia Burgers
Tuesday -
- Toddler Lunch - Mom’s Gooey Chocolatey Zucchini Brownies
- Dinner - Whole Foods “Real” Chicken Broccoli Rice, vegetarianized (with chickpeas instead of chicken)
Wednesday -
- Toddler Lunch – Lime Yogurt Muffins
- Dinner – Curry Green Beans and Quinoa
Thursday -
- Toddler Lunch – Leftovers
- Dinner – Super Easy Freezer Bean Burritos
Friday -
- Toddler Lunch – Indian Tater Tots (the Potato Balls from Baked Potato Ball Curry Recipe)
- Dinner – Thai Peanut Noodles, vegetarianized (with chickpeas)
Saturday -
- Lunch - Quinoa Egg Noodles with Parmesan-Butter Sauce
- Dinner – Grilled Veggie Flatbread Pizzas
Sunday -
- Lunch – Blueberry Bagels
- Dinner - Spinach, Walnut Salad with Creamy Bleu Cheese Dressing

All those vegetarian meals sound delicious! I am cooking challenged but I promised myself I would cook some meals this year for hubby. So far so good but I need all the help I can get. Love some of these ideas.
Those chipotle vidalia burgers sound fantastic, and oh how I wish I had an oven right now so I could make the baked potato ball curry!
