Mexican Pork and Sweet Potato Stew
“Easy peasy chicken breezy” I must have heard that phrase 50 times today. I’m up working in Montana for work for a few days and I love it. It’s a different place up here but a good different. As I sit here in the hotel room it’s comforting knowing that my boys had a great meal tonight for dinner even though I was no where to be found. They are munching on this stew. I premade it this weekend so all my husband had to do was dump it in the crockpot and press on as he left and tackled the daycare/school drop off today. I hope you enjoy it and are able to use some of those green chiles you see popping up in stores! It is so simple it’s “easy peasy pork breezy”.
Mexican Pork and Sweet Potato Stew

Ingredients:
- 1 cups Green chiles, diced
- 1 pound Lean pork loin, cut into chunks
- 1/2 cups Chicken broth
- 2 medium Sweet Potatoes, peeled and cut into 1/2 inch cubes
- 1 medium Onion, red, chopped
- 14.5 ounces Diced tomatoes, fire roasted
- 1/2 teaspoons Cumin
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- 1 Tablespoons Lime juice
Directions:
Place all ingredients into slow cooker and cook on LOW setting for 6 to 7 hours. Add lime juice and stir well.
Freezing Directions:
Place all ingredients into freezer bag and store TO SERVE Place contents in a 5-quart slow cooker.Cover and cook on LOW setting for 6 to 7 hours. Add lime juice and stir well.

This sounds so yummy! Can u buy fire roasted diced tomatoes or do u fire roast them yourself? Not to be dumb, just haven’t seen them before. Can’t wait to try this. I love this website & getting new recipes!! Thanks!
Kristin, you can buy them they are pretty readily available in the canned section in most stores now. If you can’t find them regular diced is just fine! In fact I used fresh in my last batch.

Do you freeze the veggies, meat,etc. raw or precooked? Do you thaw before putting in the crock pot?
You freeze it all raw and then dump it into the crockpot frozen.
I just made this for dinner last night and am enjoying the leftovers for lunch today. Tasty!
this looks so delicious – the words pork & sweet potato leapt out at me. I have to avoid tomatoes but it should still be a winner.
I want to make this for a frozen dinner exchange party, but one of the attendants doesn’t have a slow cooker. Is there any way to cook it in a regular oven??
You could cook it in a dutch oven on a stove top.
