Mini Pizza Meatloaves

My daycare kids love Pizza Meatloaf, but the Italian Sausage is a little bit spicy for the little ones. In order to keep my sanity, and serve the same meal to everyone (As I tell the kids – I am NOT a short order cook), I tweaked the original recipe a bit, making it a little less spicy and messy for the 12-18 month old kids. The end result was a huge success, they loved being able to pick the individual mini meatloaf up with their hands, and really biting into it and discovering the yummy taste. They are also perfect to keep in the freezer for a quick snack or alternate meal for the bigger kids as well.

Ingredients:

  • 1 lb ground beef
  • 1 lb ground pork
  • 2 eggs, lightly beaten
  • 3/4 C pizza sauce
  • 1 C saltine cracker crumbs
  • 1/2 C grated Parmesan cheese
  • 1/2 C shredded mozzarella cheese
  • 1 tsp season salt
  • 1 tsp oregano
  • 1/4 tsp pepper

Directions:

Preheat oven to 350F. Grease 18 wells of muffin tins. ( I used 2 muffin pans – each holding 1 dozen – so I only greased 6 in the 2nd pan) In a bowl, combine eggs, pizza sauce, saltine crumbs, parmesan cheese, 1/4 C mozzarella cheese, salt, oregano, and pepper. Add beef and pork and mix well. Divide the mixture among the 18 greased muffin wells. Bake 15 minutes. Divide remaining mozzarella cheese on top of each loaf. Bake an additional 5 minutes. Let cool 5 minutes before serving.

Freezing Directions:

Follow instructions above. Cool completely after baking. Place cooled loaves in gallon freezer bag. Label and freeze up to 3 months. TO SERVE: Do Not Thaw. Remove desired amount of mini meatloaves. Microwave 1 1/2 minutes at 50% power or until heated through.

Servings: 18 mini meatloaves
