Mini Sausage Breakfast Quiche

Don’t let the size of these little quiches fool you, they are BIG on breakfast flavor! Quick and easy prep both on baking day and on serving day, these are sure to become your family’s freezer staple for breakfast! You can substitute crumbled bacon for the sausage, and add chopped onions or green peppers if desired.
Mini Sausage Breakfast Quiche

Ingredients:
- 3 eggs
- 1 1/2 C milk
- 1/2 cup baking mix or pancake mix
- 12 oz sausage, browned
- 1 cup cheddar cheese
Directions:
If you haven’t already done so, brown sausage and drain grease. In a medium bowl, mix eggs, milk, baking mix and 1/2 cup of cheese. Pour apx 1/4 C of batter into each greased muffin tins. Top with 1 heaping Tbsp sausage, and sprinkle with remaining cheese. Bake 350 for 15-20 min or until toothpick inserted in center comes out clean.
Freezing Directions:
Cool completely, place on baking sheet and flash freeze for 1 hour. Store in gallon freezer bag. TO SERVE: Microwave 60 seconds.
Servings: 12 mini quiches

Do you think these would work with a non-dairy milk option? like almond milk?
Abigal – Have not personally made with non-dairy milk option before. I would think it would turn out just fine. Let us know if you try it and it works for you!
Question – pancake mix – which type the add water one? Plus excuse my ignorance what is baking mix?
A Bisquick type pancake mix. I use Krusteaz brand, but most are a “just add water” type baking mix.

Wish I would have found this recipe this morning before I tried by disaster with Grands biscuits that overflowed into the bottom of my oven. I will definitely be trying these though.

These were AWESOME!!! My picky toddler ate 2 1/2 of these for breakfast today! Next time I think I’m gonna try to add some chopped broccoli. These were so YUMMY!!!
have you tried this recipe with more eggs, and everything else the same? I’d like an eggier quiche…although I haven’t tried as it is yet :)

How long would i reheat these in the oven, we don’t use a microwave :) thanks
Dimi – I would warm them in oven on a low heat setting just until they are heated through, probably about 10 minutes. Lisa
I did not put in the pancake/baking mix…and they turned out delicious. I did add more eggs. They took 20 minutes to cook. I will be making these again. Thanks for this recipe. Convenient and a way to provide a hot, healthy breakfast without taking a lot of time.
