Not So Naughty Bacon Cheeseburger Egg Roll Recipe
Have you ever seen the show Chopped, on Food Network? Contestants compete to be the last chef standing at the end of the show, and they win by creating the best dish in a variety of categories using ingredients revealed to them only seconds before they must prepare their dishes. The combination of ingredients that are thrown at them are quite comical at times. (Like jumbo shrimp, pepperoni and cereal.) If I ever go on this show, I’m going to pray that there are egg roll wrappers in my basket. You can do anything with them, and I know that no matter what else was in my basket, I could work miracles with egg roll wrappers! They really are the perfect blank canvas, whether you’re craving savory or sweet. Mozzarella Sticks for instance, or Pumpkin Pie Egg Rolls are both fantastic uses for egg rolls wrappers if you have any leftover from this recipe.
You guys are probably looking at these thinking, how did she dream up the combination of putting bacon cheeseburgers and egg rolls together? Well, its simple really. Egg rolls are good. Bacon cheeseburgers are good. Together they’d have to be double good, right!? You might also be thinking, how in the world can my waistline afford both of these items in one sitting? Luckily, I’ve solved that problem for you too. You’re welcome! These are made with lean ground beef and turkey bacon, and baked instead of fried, so in moderation they really aren’t as naughty as their name suggests.
These egg rolls seem more like a snack, but they are so hearty they’d make a wonderful dinner as well. They were so incredibly good, they tasted just like the real thing, without all the fat and calories. They are so simple to prepare as well, let the kids help and earn their keep. I mean…spend valuable time bonding with you in the kitchen! It would be a fun and fast weeknight meal after a busy day at work, or a great snack for football Sunday. Feel free to customize this recipe and add in your favorite burger toppings. Peppers, onions or mushrooms would be nice additions. I opted to serve them with a side of ketchup for dipping, but a spicy mustard or mayo would be delicious as well. Have fun with these!

Ingredients:
- 1 pound lean ground beef
- 8 ounces Velveeta (or queso blanco, which is what I used), cut into cubes
- 4 slices of turkey bacon, cooked and crumbled (you can use regular if you prefer)
- 10 egg roll wrappers
- 1 cup cheddar cheese, shredded
- 1 teaspoon Montreal steak seasoning (or just salt, pepper and garlic if you don’t have it)
- dash Worcestershire sauce
- cooking spray
Directions:
Preheat oven to 400. Brown ground beef with steak seasoning and Worcestershire sauce. Transfer to a microwave safe bowl and add bacon and cheese cubes. Microwave at 30 second intervals until smooth. Divide the meat mixture among 10 egg roll wrappers, top with 1-2T of shredded cheese, and roll up. (There should be instructions on the package that show you how to roll them up correctly.) Spray a baking sheet with cooking spray. Place egg rolls on baking sheet and spray lightly with the cooking spray. Bake for 15-20 mins, turning once halfway through, until brown and crispy. (Note: Some of the cheese will ooze out of the egg rolls, don’t be alarmed, they’ll still taste great!) Serve with ketchup, mustard or mayo!
Freezing Directions:
They can be prepared and baked according to the above directions. Allow to cool and individually wrap with plastic wrap. Place in a gallon freezer bag and freeze.

Mmmm. A Dave and Buster’s-type restaurant used to serve Philly Cheesesteak Egg Rolls that were to die for. Yum! Yum! Yum!
