Here is a recipe with a southwest flair that can be assembled and frozen, a stuffed flank steak. Then, on serving day, thaw the night before and place in the slow cooker in late morning. By dinner, you’ll have a healthy meal with a little kick. The cilantro, peppers and corn give it the flavor and kick you need while still keeping it healthy.

Prepared in the crockpot, the apples came out nice and soft, like applesauce and the maple syrup give a nice touch of sweetness.

Nothing says “comfort” to me more in the winter months than a slow cooker creating tantalizing fragrances as it warms up a pot roast for dinner. And considering it took me all of 10 minutes to prepare and set in the slow cooker, I would have to say that it was a huge success.

As I’ve mentioned in a few posts before I got an amazing gift for my bridal shower years ago, a collection of recipes from my family and friends. My mother in law sent me this recipe and it’s so simple and doesn’t take up the oven for your holiday feasts! It also pairs wonderfully with the Idaho Ham Balls.

As the Fall season is really starting I ventured out to find a recipe that didn’t use the traditional french dip seasoning packet and also use my slow cooker! I find slow cooking the meat gives it that ultimate shred and tenderness for the perfect french dip.

I love making pesto, usually with Kale, but I’ve also been known to make it with spinach, purslane greens or even the traditional basil. You can pretty much use any green you like as well as any variety of nuts you think would pair well with those greens.

“Easy peasy chicken breezy” I must have heard that phrase 50 times today. I’m up working in Montana for work for a few days and I love it. It’s a different place up here but a good different. As I sit here in the hotel room it’s comforting knowing that my boys had a great meal tonight for dinner even though I was no where to be found. They are munching on this stew. I premade it this weekend so all my husband had to do was dump it in the crockpot and press on as he left and tackled the daycare/school drop off today. I hope you enjoy it and are able to use some of those green chiles you see popping up in stores! It is so simple it’s “easy peasy pork breezy”.
