Soup is a fantastic way to get a hefty dose of vegetables into a convenient cup. After buying the organic carton brand of red pepper soup, I decided it was time to tackle it my own way. It’s not only delicious but it’s also gluten and dairy free! And it’s husband and toddler approved!

This combination is a baked roll with a mixture of chicken, cabbage and carrots though many ingredients could be easily substituted to fit your individual preferences. Baking them and filling them up with lots of vegetables keeps them lighter in calories and fat yet still gives you the taste you enjoy from the fried variety.

Are you a fan of buffalo sauce? But not a fan of all the butter in buffalo sauce? This is a great recipe with no butter but still lots of flavor. In addition, lettuce wraps are a great healthy way to have a fun meal without extra carbs and calories.

This Minestrone Soup recipe is chock full of vegetables in a chicken or vegetable stock base. Add chicken to make it a little more hearty or leave the chicken out and use vegetable stock to make it vegetarian.
