“Chicken” cutlets plus Garlic Lemon Green Beans…Mmmmmm….can it get more delicious? After baking this dish, I find myself wanting to bake trays of sliced lemons just for the fantastic aroma in my kitchen. Delicious!

I was excited to find this easily convertible Baked Shrimp and Veggie Egg Rolls recipe. I replaced the shrimp with diced chickpeas and, if you like, you can add a bit of vegan fish sauce to “shrimp” it up a bit.

Finding meals to eat and serve among meat-eating relatives can be difficult without proper preparation and a lot of creativity. I know in my younger days I ate a lot of meals comprised entirely of meat-free side dishes while everyone else had ham or turkey. But, there’s no reason you can’t enjoy a flavorful meat-free main dish, too. This breaded Pistachio-Cranberry chicken incorporates those Fall flavors, serves as a hearty main dish and is meatless.

I love making pesto, usually with Kale, but I’ve also been known to make it with spinach, purslane greens or even the traditional basil. You can pretty much use any green you like as well as any variety of nuts you think would pair well with those greens.
