A grilled flatbread pizza dough topped with grilled vegetables, such as broccoli, onion and mushrooms. Topping with a variety of vegetables allows you to use very little cheese but still satisfy the pizza craving!

This recipe is incredibly easy and comes out so beautiful that your family or guests will think you’ve been slaving over them all day. It takes a bit of a time investment, about an hour and 15 minutes with prep and cooking time, but the cute little Wild Mushroom Bread Pudding Cups you get as a result are so worth the investment. And, our kids loved them, too!

Instead of pizza with mushrooms, make it a stuffed mushroom pizza. A surprisingly satisfying and healthy substitution.

The best part of this meal for me is that you don’t even have to thaw before placing in the Crockpot!

This chicken stir-fry features one of spring’s tastiest vegetables: sugar snap peas. This dish is a perfect combination of opposites. It is warm and comforting enough for a cooler evening, but still gives you that fresh, crisp taste of spring. And the fresh mint and Sriracha sauce give it some character!

As I’ve mentioned in a few posts before I got an amazing gift for my bridal shower years ago, a collection of recipes from my family and friends. My mother in law sent me this recipe and it’s so simple and doesn’t take up the oven for your holiday feasts! It also pairs wonderfully with the Idaho Ham Balls.

Quesadillas are quick easy therefore they show up in our house pretty often. I love the variation that they provide, and not to mention they tap right into my obsession with cheese! Green chiles are huge in Colorado. Especially in August they are on every roadside, at every farmers market, with these big tin roasters and you can buy them but the bag full. They are so very easy to roast on your own! This combination of the green chiles with corn and mushrooms is sure to please even the pickiest of palates.

I’ve become somewhat addicted to Blueberry-Balsamic marinade of late. So, when I received not only beautiful pattypan squash and portabellas, but also blueberries in a recent CSA box, I decided on a variant of stuffed peppers. I love replacing the rice in stuffed peppers with quinoa, which is a complete protein, and portabellas are just [...]

After our trip the farmer’s market again last weekend we came home with another mixed bag of mushrooms. More exotic this time, so what better way to showcase them than in this creamy dish you could use for a main vegetarian dish or a side to a delicious roast chicken!

We ordered a half a beef this year from a local organic farm, and usually get our chickens from our CSA, but I will admit pork loins are a hard meat to find at our farmers markets. Mostly because they’re a bigger cut, but I have put in several requests hoping I can get some [...]

I haven’t had a ton of experience with quinoa, but what I have had, I have loved. So when it came time to put together a menu, I knew I had to do a new quinoa dish. Roasted vegetables were an automatic winner to pair with this delicious grain. This is going to be fabulous [...]

When I lived in or visited Kansas City, my mom and I used to frequent a restaurant in the Plaza called Canyon Cafe. Back then, there were not a lot of vegetarian options in nice restaurants, or fast food, or anywhere really. But this place had the best vegetarian pasta ever. And, bonus, a delicious [...]
