This recipe is incredibly easy and comes out so beautiful that your family or guests will think you’ve been slaving over them all day. It takes a bit of a time investment, about an hour and 15 minutes with prep and cooking time, but the cute little Wild Mushroom Bread Pudding Cups you get as a result are so worth the investment. We absolutely love empanadas of all varieties. And, our kids love spinach, so we knew this empanada recipe should be a hit. The flaky, soft dough is filled with spinach, mushrooms, onion, garlic and cheese. It’s great for a simple family meal or with such a fancy little package, it’s the perfect treat for dinner when company’s coming over.

The original recipe is for a copycat of a thin picante, but since we prefer a thick and chunky version, I’ve adapted it to use diced tomatoes instead of tomato sauce and added a green bell pepper and an extra onion.
