Soup is a fantastic way to get a hefty dose of vegetables into a convenient cup. After buying the organic carton brand of red pepper soup, I decided it was time to tackle it my own way. It’s not only delicious but it’s also gluten and dairy free! And it’s husband and toddler approved!

Using fish and seafood is a great way to keep meals lower in calories and fats. Here’s a lighter pasta dish that is easy to assemble and tastes great. The shrimp keeps it light and just a small amount of feta cheese adds great flavor.

This Minestrone Soup recipe is chock full of vegetables in a chicken or vegetable stock base. Add chicken to make it a little more hearty or leave the chicken out and use vegetable stock to make it vegetarian. Either way, it makes a quick lunch that easy to serve from freezer to table and is healthy, low-calorie and quite tasty

The original recipe is for a copycat of a thin picante, but since we prefer a thick and chunky version, I’ve adapted it to use diced tomatoes instead of tomato sauce and added a green bell pepper and an extra onion.

One of my favorite quick lunches are paninis. I still can’t make myself buy one of those fancy panini makers yet. I improvise with a grill pan and another heavy skillet. This panini is light and savory. You can make it with or without prosciutto if you would like too!

One time in college I was dating a guy and I wanted to impress him so I called my Mom and asked her for a few meals that I could make and freeze to take over to their house. This recipe was the top of the list. It’s a wonderful recipe for the start of fall and to use up the very last bit of your garden vegetables while they last.
