Paleo Bacon Wrapped Spicy Chicken Poppers
Don’t you just love it when you find a dish that’s super easy but looks like it took some skill to make? Well, these Paleo Bacon Wrapped Spicy Chicken Poppers are just that. Plus they are Whole30 compliant. All you have to do is pound a chicken breast thin, sprinkle spices of your choosing on it, roll it up and wrap it with bacon. Easy and delicious!

Ingredients:
- 1 pound boneless, skinless chicken breast, preferably from an organic and pastured source
- salt, to taste
- 2 Tablespoons chili powder
- 4 slices “clean” bacon
Directions:
Preheat oven to 400 degrees. Cover chicken breasts with plastic wrap and pound thin with a mallet. Season both sides of chicken breasts with salt and chili powder (or your seasoning of choice). Place a bacon slice under each chicken breast and roll. Secure with a wooden toothpick if it won’t stay rolled. Place chicken poppers on a pan and bake 25-30 minutes, or until thoroughly cooked.
Freezing Directions:
Let cool. Place chicken poppers in freezer bag and freeze. To Serve: Thaw and reheat.

What “clean” bacon do you use? US Wellness Meats is too expensive and we don’t belong to Costco to get the brand they sell. Thanks! :)
Costco’s has sugar in it i am pretty sure. I found a local butcher through asking on FB, I would also check localharvest.org and eatwild.org.
