Paleo Beef “Sausage” and Broccoli Egg Muffins
“What do you eat for breakfast?” That’s the biggest question I hear from people new to Paleo. There really are a ton of options, but you sometimes have to plan ahead to find quick and easy to grab Paleo breakfast foods. That’s why I’m a big fan of “muffin” type recipes for breakfast. This Paleo Sausage and Broccoli Egg Muffin recipe is no exception. They’re an easy way to eat good protein, vegetables and healthy fats to start your day off in the zone!
Beef “Sausage” and Broccoli Egg Muffins

- 1 pound homemade sausage
- 1 cup broccoli florets, coarsely chopped
- 8 eggs
- 1/4 cup coconut milk, canned (full fat)
- 2 Tablespoons coconut oil, melted
- 1/2 teaspoon baking powder (aluminum-free)
Preheat oven to 375 F. In a large saute pan, brown beef sausage. Remove from heat and stir in chopped broccoli. In a seperate bowl, whisk together eggs, coconut milk, 1/2 of coconut oil, and baking powder. Use remaining oil to grease muffin pan (or use cupcake liners). Evenly place meat/broccoli mixture into muffin pan. Pour egg mixture over meat/broccoli. Bake 15-20 minutes.
Allow egg muffins to cool completely. Individually wrap each muffin in plastic wrap and place in a freezer bag. To serve: Thaw. Heat in microwave for 1 1/2 minutes at 50% power.
