Paleo Garlic Ginger Chicken with Bok Choy
I previously mentioned that I like to cook a whole chicken to freeze the meat and have shredded chicken available at a moments notice. One of the benefits of doing that is the ability to whip up a healthy Paleo meal in minutes. This Garlic Ginger Chicken with Bok Choy is one of those meals that is nutritious, yet extremely quick and easy to make. It’s even Whole9 compliant! I don’t know about you, but bok choy isn’t something we eat on a regular basis. Thankfully, the ease of this meal makes it simple to be adventurous, get out of my comfort zone and try new vegetables!

- 2 Tablespoons coconut oil
- 8 teaspoons garlic, minced
- 6 teaspoons ginger, freshly grated
- 8 cups bok choy, chopped
- 2 cups chicken, cooked and shredded
- sea salt, to taste
- freshly ground pepper, to taste
Heat coconut oil in a large frying pan over medium heat. Add garlic and ginger; saute until slightly brown. Add bok choy and saute until slightly tender. Stir in cooked shredded chicken and cook until heated through. Season with salt and pepper.
Let cool. Divide and place into a freezer bag. Seal, label and lay flat to freeze. To serve: Thaw. Reheat.
