Test Cooks
Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer.

I’m super excited about these recipes! This will be our family’s first month going Paleo! I do have a question, what brand of whey protein powder do you get? We live inthe middle of no where so I have to order a lot of my “special” foods online. :) Thanks!
I’m so glad! http://www.strongerfasterhealthier.com/ is a good brand because it’s supposed to be organic and more bioavailable than most. However, I leave the powder out much of the time and just serve with hard boiled eggs. In a pinch, though, it’s better than no protein at all!

Hi! The Grocery List confused me a bit with an item listed only as “maple” That wasn’t an intuitive thing for me, but I figured it went with the cinnamon rolls. The recipe card for them also only states maple. Doesn’t specify sugar or syrup. But if you go to the original blog post you can figure it out :) Just wanted to give a heads up!

Thank you so much for going paleo! We’ve been eating this way a year for health reasons. It’s been trial and error cooking without spending all my free time in the kitchen.
I live the step by step instructions. But as a previous comment the quantity won’t change and when I had my husband show me what to do it cut off half the instructions. On All if the Menues. So I have to hand write them. Any suggestions?

I just made the paleo cinnamon rolls. They did not turn out like the picture! I don’t know what I did wrong, but, they are really good!
Mine, too, were kind of a mess – but tasty. My paleo resistant daughter and husband are gobbling them up.
So this is my first time looking at a OAMC plan, and I have a question. For the night(s) that you eat the Paleo Crockpot Spare Ribs, what do you have with it? Is that info listed for members, or is it assumed that you’ll make some sort of side dish along with all the meals separately?
I would definitely serve a vegetable or two with the ribs, perhaps a simple salad and sweet potato! Since paleo is big on fresh fruits and veggies, a trip to the store or farmer’s market for weekly veggies would still be a good idea, even when you have a freezer full of meals.
For both of the Squash do I have to peel them before cubing or how does that work? I’ve never cooked with them before. lol Thanks!
yes, you should peel them first.
The cheat sheet lists Zucchini, Black Bean, and Rice skillet, but I don’t see that listed anywhere else? (Also, happy to see this Paleo menu here!)
That was a miss-type, it should be the Sweet Potato Basil Soup. And yes Paleo is here to stay!
I’m really disappointed in the inconsistencies in this month’s recipes. The tacos were a mess. Part of the reason was that I divided into 8 portions, like the instructions said, but then used 8 muffin cups, instead of 16. Then, they didn’t come out of the cups well. They’re more like taco mush now.
Also, the Mini Paleo Pizzas say to bake at 425, and the instructions have you keeping the oven at 350.
I see that you’ve fixed the amount of Almond Flour required. Not sure what I’m going to do with the rest of the 12 cups that I bought (Holy Moly was that expensive!) There was also no Spinach on my list when I printed it.
It helps me a lot to have these menus, since I have a family and a career. I will not continue to pay for these menus if this is the standard quality.
Megan, we are sorry your are disappointed and that you ran into some mistakes. We put our menus through a RIGOROUS 3 month process before they are ever published (http://onceamonthmom.com/get-started-the-life-of-a-once-a-month-mom-menu/) and do our best to create full-proof menus. However, as stated on our FAQ’s (http://onceamonthmom.com/membership/faqs/) there are sometimes mistakes. These menus are not generated by a computer system, they are developed by humans who, despite there best efforts, miss things from time to time. The mistakes you uncovered are not our standard but I understand if you are frustrated enough not to continue. The mistakes you noted are being checked and changed where necessary for future readers. We are doing our best to continue to get better and to build out a system that is free of human error.
Cilantro and diced tomatoes are missing from the shopping list that I printed out. Also, the original recipe for beef stew calls for tomatoes. This was left out from the OAM recipe. Is there a reason?
Karyn, thanks for the catch I have added these to the grocery list and cards. Not sure how they missed our test cooks and audit, but it’s fixed now!
also, the shopping list calls for 2 limes (I am cooking for 8) and it should say 2 CUPS of lime juice. It would also be nice if the shopping list would specify between frozen spinach and fresh. I bought 4 bags of fresh spinach, yet the beef stew calls for frozen. Can I use the fresh?
Sorry about that Karyn! The assumption was that you could get .25 cups of lime juice out of one lime but I’ll differentiate that next time and note it on the shopping list. Same with the spinach. And, yes, fresh spinach should work great!
I had trouble with some of the quantities coming out strangely as well. 6 pounds of chicken for something? Was able to figure out as I went along.
The Paleo Cinnamon dough was VERY sticky. I added some arrowroot, which didn’t really help. Ended up with drop cinnamon rolls. Still good, but did not look anything at all like the picture.
Wow! I’m glad i’m not the only one who had problems. I’m doing the best I can with what I printed out. I read and re-read how to do this and still had problems. This is not the first time I have done oamc cooking, but it is the first time I have used this plan. So, far it has been a struggle.

I’m am going to attempt the Paleo menu this month. Thank you for including this one, I have been wanting to try it out for awhile now. I do have a child with a lot of different allergies that is making meals very tough so I’m hoping this menu will be easier. I know this will break the paleo rule but she has an almond allergy. Do you think the cinnamon rolls will still work out with either coconut flour or your GF all-purpose mix? Would you suggest to use the same measurements when I swap it out?
Welcome Cara! I hope this menu helps you significantly too! Almond flour and coconut flour are not interchangeable. Coconut flour is a lot more dense. I would say you could be safe making these with a GF all purpose mix, but I haven’t tried it yet.
Fixed the cinnamon rolls. Used same amount of GF flour mix but added extra egg, 1/4cup water & 2-3 T of coconut oil. Let dough & filling cool for 10mins in fridge so it rolled easier. Then baked in muffin tin so they retained their shapes.
Didn’t work as good with the mini tacos. Dough didn’t bake well. Not sure what I’m going to do with this now. lol might just fry it & see what happens.

Yes the mini tacos are a bit trickier. I would say you could do the GF mix and prebake the shells a little then add the filling and bake.
I have also noticed some inconsistencies and errors, but going with it – if cooking is a science, then every meal is an experiment! I got a late start yesterday, so didn’t finish my OAMC day (will tonight), but wanted to share a couple taco tips:
1) After I spooned the crust mix into the muffin pans, I used a silicone baking cup to mash it down and up the sides evenly.
2) Getting them out of the pan was a trick – I ended up placing an overturned baking sheet on top of the muffin pan, flipping, and tapping. I was able to get 14 of the 16 mini tacos out in one piece (the other two fell victim to my trying to scoop or pry them out).
Also, I’m thinking my cinnamon roll dough was too soft when I tried to form the rolls. I might try chilling it if I make it again.

I posted on the FB page and came on here to look if anyone else had issues with the bacon glazed acorn squash. I’ve read it several times and am still not clear on how this is supposed to work. Currently, I have 5 acorn squashes, halved, boiling in my bacon grease mixture and it’s a pretty huge mess. It didn’t say to roast or to peel until after it’s out of the freezer and how it currently looks just doesn’t make sense to me. I am a huge OAMM fan but have been disappointed at the quality of the instruction cards (for the Paleo menu) and have had to go back to the original blogs to try to make heads or tails of things. We purchased the membership and are committed to making a go of this – but I honestly didn’t expect it to be so challenging. Just my constructive feedback…I truly appreciate the effort that is put in to make this work.
Annie, we have corrected the cards and responded on FB. The squash should be cubed that should help get you through the recipe better and we’ve also added the bacon back in. Again we apologize for the inconvenience the cards have caused you this month, but we do go through a very rigorous editing process. We are working to make things better every day. I haven’t printed for this menu yet because of all of the quantity problems I saw.
Have these been fixed? This would be my first time cooking with OAMM and I dont want it to be a big ol’ failure!

Has the Boeuf Bourguignon been changed to the Paleo Beef Stew? I was wondering about the amount of bacon (not that there is anything wrong with bacon!)

Jasmine, we don’t have a pork menu, do you mean the recipe card?
Two things:
- I still find the bacon glazed squaash recipe confusing, because it looks like you mix the bacon into the squash, but it later says in the serving directions to heat the bacon mixture separartely. Isn’t the bacon and shallot mixture already mixed with the squash?? I just improvised as I was cooking, but found this recipe to be very confusing (I did it on January 5th after the recipe had been edited).
- I just added extra almond flour to my cinnamon rolls until it looked like normal dough consistency and they turned out just like the picture.

Really confused as to how one measures Kale, for the smoothie. By weight or volume? ie when I have something that wont fit in a cup nicely I weigh it 8 oz to a cup. Thanks in advance
We measure the kale chopped and then in the cup not packed.

I made the “Blueberry Chocolate Chip Loaf” from the Paleo menu and it turned out FABULOUS! Only change, instead of 30 min, I had to bake for 35 – but it was scrumptious. I am so happy I can feed my kids all of those nutritious foods in one bite! Thanks for finding this great recipe for me!
I know I am late in on this (I had no internet/printer at the beginning of the month) but I think there is still a problem with the Bacon glazed Winter Squash. Should I be mixing in the squash to the cooking bacon mixture and then freeze, or do I keep them separate, warm the bacon/shallot mix and combine after cooking? I am kind of afraid to start the cooking day with out knowing, I was planning on getting this all for February…
Also the Spiced Pork and Butternut Squash with Sage is a bit confusing with its 1/3 of gallon bags, I am cooking for three people.
I also want to add a suggestion (though not required) is that some on paleo diets (or just health conscious or poor?) do not own microwaves, so a suggested time for stove top or oven reheating would be helpful! Thanks so much!

For the Bacon Glazed Winter Squash: the bacon fat is basically your “oil” for cooking the squash. So, you can cook the shallot, garlic, and squash in the bacon fat. Then add the cooked bacon back in and freeze as one dish.
For the Spiced Pork and Butternut Squash: The containers are definitely confusing when cooking for more than one person. It’s the one thing that’s difficult to adjust on a spreadsheet (there’s a little disclaimer in the instructions:) If you are cooking for 3 people, you should probably be able to keep the recipe together. However, you want to use Gallon Bag #1 for the pork, Gallon Bag #2 for the squash, Pint Bag #1 for the Sage, Pint Bag #2 for the coconut milk (unless canned) and Gallon Bag #3 to put the other filled bags (so the entire recipe can be contained). This can definitely be re-written for clarity so I’ll work on that.
As for the microwave, I completely understand and am in the same boat most of the time. We’ll often just say “reheat.” However, since the majority of people still use the microwave, it’s just easier to use that as a guide. It seems that people who don’t use the microwave have learned to adjust. I’ll bring it to the team though and see if we can come to a solution.

what if you have a coconut allergy in the house. What do you use in place of coconut oil or milk?
You can substitute almond milk. As for coconut oil it depends on the recipe but you can use olive oil for cooking, unsweetened applesauce for baking.
