So when I am down and out and can’t find anything to fix for dinner (or just plain don’t feel like any of the meals in our freezer) this is what I fix. It has been a staple for my husband and I over the years of our dating and marriage. It is our “go to” meal. It is also somewhat of a comfort meal for us. It is so simple and I am sure that many of you make it for your children, or even your family. But I thought you might like to know some of the things that I fix when I am not cooking from my freezer.

Pasta

  • 8 ounces Fettuccine Noodles
  • .25 cup of butter
  • .75 cup Parmesan Cheese
  • 1 teaspoon garlic powder (or minced garlic)

Directions:

Boil pasta noodles according to package directions. Drain off water and return to pan. Mix butter in and stir until melted. Stir in Parmesan cheese and garlic powder. Serve.

Veggies

  • 12-16 ounces frozen mixed vegetables
  • 2 Tablespoons butter
  • 2 teaspoons Italian seasoning

Directions:

Melt butter in large skillet over medium heat. Add frozen vegetables. Cover and steam for 5-10 minutes or until vegetables seem to be nearly cooked (stir occasionally). Cook an additional few minutes uncovered. Add Italian seasoning and serve.

    Hey! This is one of my favorite meals! You just gave me an easier recipe though :o ) I usually make the sauce separately with the butter, parm cheese and cream or half & half…but I don’t always have the cream…I never thought of doing it your way! Thanks! I’m so excited :o )
