Peanut Butter Granola Bites
My boys love traditional rice krispy treats. Even more, they love “Scotcheroos” (you know the peanut butter/crisp rice bottom with a layer of chocolate and butterscotch chips on top) But I feel a little guilty when I make them, with the overload of corn syrup and sugar that is in every bite.
These little PB granola bites pack the same yummy peanut butter and chocolate flavor, in a little healthier form. Using Agave nectar (or you can sub honey) for the sweetener, and the pairing of rolled oats and crisp rice cereal – these little bites will soon become an afterschool favorite!
Peanut Butter Granola Bites

Ingredients:
- 0.33 cups agave nectar
- 0.25 cups creamy peanut butter
- 2 Tbsp butter
- 1 cup crisp rice cereal
- 1 cup old fashioned old oats
- 0.5 cup mini chocolate chips
Directions:
Place chocolate chips in freezer prior to prep – this will help them not to melt when you add to the mix. In a small saucepan over medium heat, combine agave nectar, peanut butter, and butter. Stir until melted and smooth. Remove from heat, and stir in cereal and oats. Let mixture cool for about 2 minutes, then stir in chocolate chips. Form mixture into tablespoon sized balls, and place on waxed paper lined cookie sheet. Refrigerate for 15 minutes or until set.
Freezing Directions:
Follow directions above. Place cookie sheet in freezer instead of refrigerator. Flash Freeze. When bites are frozen solid, divide among indicated number of gallon sized freezer storage bags. TO SERVE: Remove desired number of bites from freezer and thaw on countertop for 20 minutes.

I am assuming that is supposed to say “old fashioned rolled oats” in the ingredients?
Yes Helena, some place they’re just old fashioned oats, others they are rolled oats.
Can you use natural peanut butter with this recipe?
Stella – I haven’t tried it with natural – but I am sure it would work. If you experiment – please let us know how it turns out!
I made these today with honey………..oh my, they are good. I have eaten a bunch already. Glad I made a double batch. ;)
Where do you find agave nectar?
Rosalyn – I find it in the baking section at my local grocery store. May also be in with syrups?
