“Pink Soup” Smoothies

Some mornings are a rush. Smoothies are popular in our house since they fit the bill for a quick yet balanced breakfast that includes the goodness of fruit and the protein of yogurt. With no added sugar, this smoothie is still sweet enough to tempt children, and its fun color makes it a winner as well. When my little ones clamor for “Pink Soup,” I know exactly what to whip up!
“Pink Soup” Smoothie

Ingredients:
- 0.5 cup apple juice
- 0.5 cup plain, fat-free yogurt
- 1 cup frozen tropical fruit blend (which includes peach, pineapple, mango, and strawberry)
- 1 medium banana
Directions:
Add ingredients to blender in the order listed above.
Freezing Directions:
Pour cup-sized, individual portions into quart-sized freezer bags. Freeze flat. To serve: Thaw partially, until smoothie is soft but not liquid.

I don’t know why I haven’t thought about freezing smoothies before. I freeze the fruit and then make them. Thank you. I am going to try this one. It would be so much easier on busy mornings.
