Pita Pizzas
Friday night is the most-looked forward to dinner at my house as we typically welcome the weekend with pizza and a movie. Admittedly, we order our pizza a couple of times a month giving me a night off from cooking, but the other weeks we enjoy making our own. My kids particularly love when we make “pita pizzas” as the pita rounds create the perfect mini crust for them to customize with their favorite toppings.
Pita Pizzas

Ingredients:
- 8 whole pita breads, unsliced
- 1 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 1 cup pepperoni
- other pizza toppings as desired
Directions:
Spread flat pita bread with pizza sauce. Sprinkle with desired pizza toppings, then cheese. Broil approximately 5 minutes or until cheese is melted and bubbly.
Freezing Directions:
After assembling pizzas, do not bake, instead, wrap individually in plastic wrap and divide among freezer bags, seal, label and freeze. To serve: Broil for approx. 5-10 minutes or until hot and bubbly, or microwave until hot and bubbly.
Servings: 8 mini pizzas

We ate these last night and it was a HUGE hit. I made 12 as the pita packages I found come in 6 per bag. No waste here! My kids & husband loved having their individual preferences. I will use your pizza sauce recipe next time as I used prepared for these. This is going in my regular freezer cooking lineup!!

Are these okay to throw on the grill?
I don’t see a reason not to!
Is it okay to freeze these with fresh veggies on them or do they need to be blanched first? Specifically I am thinking bell peppers & zucchini. Thanks so much!
Freezing them with fresh veggies shouldn’t be a problem.
