Raspberry Kiwi Smoothie Recipe
In an effort to incorporate the never present Kiwi into our Once A Month Mom menu plans, I devised a smoothie worthy of our cooking day. Thanks to the inspiration of an organic smoothie from Lunch Box Bunch I was inspired. And boy was I pleased.
I am not vegan, nor ever plan to be, but I figured I could take her idea an un-organic-ize it and we would be set. Turns out I was right! I whipped this smoothie up one afternoon when I had a play date and was so pleasantly surprised. I am not really much of a smoothie person but I loved this smoothie. In fact, hours later I was craving another one. And what is wrong with that? It is filled with tons of great fruit which means it is a nutritious drink, snack or breakfast treat.
Note: When I made this the first time I replaced the milk with equal parts of juice because my guest was dairy free. It tasted just as good, if not better than the original recipe. I made it both ways and liked them both!

Ingredients:
- 0.67 cups fresh raspberries, frozen (use flash freezing method)
- 0.5 cups blueberries, frozen (use flash freezing method)
- 0.75 cups cranberry-raspberry or raspberry juice
- 0.33 cups milk
- 6 ice cubes
- 1 Tablespoon ginger, fresh, grated
- 0.5 each banana
- 3 kiwis, peeled
Directions:
Blend all ingredients except kiwi and banana. When smoothie is smooth, add in fresh fruit. Blend lightly and serve.
Freezing Directions:
Instead of serving portion into pint size freezer bags in serving portions. To serve: Thaw in refrigerator or on counter top until melted and slushy. Serve.

How much dried ginger do you think you’d use rather than fresh? My kids just saw this and told me to print it out! I don’t usually buy fresh ginger though.
I think 1 teaspoon would be just right. :)

thought of raspberry and kiwi together is making my mouth

This had ginger in it?? I’m so surprised because I never
would have thought so, and I’m generally not a huge ginger person!

I just whipped up a batch, and realized I should have
bought more kiwi so I can do another batch or two! Love that I can
give these to my kids knowing they will get a variety of fruit
without tons of added sugar (purchased the light juice)!
