Red Velvet Pancakes
Are you a Pinterest Addict like I am? Countless hours this holiday season have been spent admiring many a holiday recipe. My intentions to bake every single one of them are good, but unfortunately there are never enough hours in the day! This recipe for Red Velvet Pancakes, however, made it from “pin” to plate in record time. I actually made them for breakfast the day before Thanksgiving…because I couldn’t wait until the Christmas season to try them! They were so delicious, so much so that it was almost like eating dessert for breakfast (which tickled the kids). The red velvet flavor with the mini chocolate chips was perfect, not to overwhelmingly sweet even with a dab of maple syrup over top. When I made them, I doubled the batch, so now we have a batch in the freezer awaiting Christmas Eve morning.

do you think I could make the batter tonight and have ready to throw on the griddle for tomorrow am before school? also, I do not have buttermilk but do have whole milk- would that be ok? thanks!
Yes, you can make the batter up ahead of time. And if you use whole milk add 1 Tablespoon of vinegar for every 1 cup of milk and let it sit for 5 minutes before adding it to the recipe, that will give you buttermilk.
hey hey- thanks for the tip! I may have my son helping me now while our kale chips are cooking:) i thought this would be fun for the valentines day morning.
