Rice Krispies Ice Cream Sandwiches

As I mentioned yesterday, when I took on the Rice Krispies Treat challenge I had some great ideas swimming around in my head for freezer recipe creations. Today’s recipe is another brainstorm for the freezer.
The variations on this recipe are absolutely endless. Simply name your favorite type of ice cream and then come up with a Rice Krispies Treat flavor that will suit the chosen frozen treat! Or, if you have a color scheme/theme that you are working with, choose your ice cream color and again choose an accompanied Rice Krispies Treat flavor. The skies the limit!
This recipe can be done with kids of any age and I would HIGHLY recommend getting your kids involved. The decorating options are endless and lots of fun! We made these at the Ziploc House Party and the kids participants had so much fun.
So without further ado, the second of three recipes that you are going to have to help me decide upon.
Rice Krispies Ice Cream Sandwiches

Ingredients:
- 1 batch Rice Krispies Treats
- .5 gallon ice cream (I used Orange Cream & Strawberry)
- Embellishments:
- Sprinkles
- Chocolate Chips
- Colored Sugar
- Colored Icing
- Candies
- Cookie Cutters
Prepare 1 batch of Rice Krispies Treats according to package directions. Divide the batch of Rice Krispies Treats between 2 buttered 9×13 pans and press down with wax paper. The Rice Krispies Treats should be fairly thin. Allow to cool/set for at least an hour.
Once they are cool, use your favorite cookie cutter shapes to cut out treats. You can also simply cut them into rectangles or squares if you would like. Make sure that you have an even number of shapes when you are through cutting. (Feel free to snack on “scraps”.) Set aside.
Allow the ice cream to soften a bit. Place wax paper down in a 9×13 pan and place 1/2 of the gallon of ice cream on the wax paper. Using another piece of wax paper press the ice cream down until it completely covers the pan (see pictures below). Freeze for at least 2 hours or until the ice cream becomes firm again.
While the ice cream is freezing, have your guests/kids/party goers decorate one of the cookie cuttered Rice Krispies Treats (this will be the top).
Remove the 9×13 pan from the freezer and using the same cookie cutter shapes cut out an ice cream shape. Place a Rice Krispies Treat shape on the bottom, followed by the ice cream shape and topped with the decorated Rice Krispies Treat shape. Serve!
These can also be assembled, wrapped in plastic wrap, placed in a zippered freezer bag and frozen until later. Amazingly, the Rice Krispies Treats stay soft! YUM!
Variations:
If you would like to make the Rice Krispies Treats flavored simply add .5 cup of your favorite mix-in after the marshmallows are melted and before adding Rice Krispies. Here are some suggested variations:
- Add chocolate chips to Rice Krispies Treats to make chocolate RKT and use peanut butter ice cream.
- Add chocolate chips to Rice Krispies Treats to make chocolate RKT and use cookies & cream ice cream.
- Add peanut butter to Rice Krispies Treats to make peanut butter RKT and use chocolate ice cream.
- Add chocolate chips to Rice Krispies Treats to make chocolate RKT and use strawberry ice cream.
The variations are endless, be creative! Do you have suggestions for other variations/flavors?

Hmm, one of my favorite all time snacks is rice krispy treats. I can even have them still as a diabetic. Wish I could get a campaign like that! How lucky you are!
My in-laws make krispy treats for easter with little egg shaped gum drops. They spend quite a while cutting every little egg in half and then stir them into the mix towards the end.
