Rice Krispies Treats Easter Baskets

Since this is a freezer cooking website I really wanted to create a recipe for the Rice Krispies Ambassador food challenge that could utilize the freezer. However, I wasn’t certain it would work. So I began product testing.
I took this recipe out of the freezer to take pictures as a recipe FAIL post. I just knew it was going to be hard as a brick and inedible BUT I just had to get a picture of the concept and all the hard work that went into it. And then I decided to take a bite just to see. That’s when this recipe went from FAIL to SUCCESS! It was DELICIOUS! I couldn’t believe it, the Rice Krispies Treats had even stayed moist! I was so excited.
I love the colorfulness of this recipe. It is a bit difficult for younger kids and requires quick handy work but it would be great for older kids or to make for a themed party. You can make these ahead of time and you can even choose the sorbet that best fits your color scheme. They are super tasty too!
So this is the first of three recipes that I am going to introduce to you. I can only submit one of the three recipes for the challenge so I am going to need your help! Rice Krispies Treats Easter Baskets

Ingredients:
- 1 batch Rice Krispies Treats
- 1 pint sorbet, any flavor/color
- 12 pieces licorice, any flavor/color (I used Twizzlers Filled Twists)
- .5 cups coconut
- 2 drops green food coloring
- .5 cup jelly beans
Directions:
Prepare a half batch of Rice Krispies Treats according to directions. Butter 12 large muffin tins. While Rice Krispies Treats are still warm in the pan, add a large spoonful to the bottom of each muffin tin and press firmly with wax paper. Remove wax paper. Place .25 cups sorbet on top of the Rice Krispies Treats in the muffin tins. Place in freezer until next step is complete.
Make another half batch of Rice Krispies Treats and quickly add another layer to the top of the sorbet until the muffin tin is full. Place licorice where you would like it to be for the basket handles and mold Rice Krispies Treats around the licorice, pressing as you go. Using wax paper or buttering your hands is very helpful. Place in freezer immediately. Allow to freeze for at least 6 hours, overnight if time allows.
Place 2 drops of green food coloring among .5 cup of coconut and mix until incorporated. When ready to serve the baskets, gently remove them from the muffin tins and place on a cold/frozen serving platter. Add green coconut for grass and jelly beans for eggs. Serve immediately!
Freezing Directions:
See directions above. You may prepare these ahead of time and freeze. Keep in mind that the jelly beans and licorice will be very hard if you do so.
