Ricotta Pancakes
Getting up to no alarm, staying comfy in your pajamas, lounging with the newspaper, strolling to the park, these weekend activities require breakfast to be appreciated. There are many types of pancakes out there, from your typical batters handed down through the family to even quick and easy mixes. These Ricotta Pancakes are light, fluffy and decadent. I believe they are the perfect accompaniment to those summer fruits and berries. Really they’re great at any time of year, especially when you can break out the griddle and have little to no clean up!
Ricotta Pancakes

Ingredients:
- 1 Cups Flour, unbleached, unenriched preferably organic
- 1 Tablespoon Sugar
- 0.5 teaspoon salt
- 1 teaspoon lemon zest
- 3 Cups Ricotta cheese, preferably organic
- 8 medium Eggs, separated
- 1 teaspoon cinnamon
Directions:
1) Heat a nonstick griddle or pan to medium high.
2) Mix together the flour, sugar, salt, cinnamon, lemon zest, ricotta and egg yolks in a bowl until combined.
3) Beat the egg whites in separate bowl until stiff. Fold egg whites into mixture.
4) Coat griddle with butter or light olive oil.
5) Ladle 1/2 cup size pancakes onto the griddle and cook for about two minutes per side, until golden. Serve with 100% Maple or Agave syrup, jelly, berries or powdered sugar!
Freezing Directions:
Let cool, place in gallon freezer bag and freeze. To serve: Warm up in a 200 degree oven for about 10 minutes. Or microwave for two minutes until warm.

I am so excited to try these for two reasons… They look scrumptious (especially since I have home grown strawberries to put on them!!!) and I have been making my own yogurt using your recipe and I have found that you can make ricotta from the leftover whey! So now I am VERY VERY VERY excited to try this with home-made ricotta. Wish me luck!
