Rosemary Balsamic Glazed Rack of Pork with Roasted Vegetables {Giveaway}
I mentioned earlier this week that I had been challenged to come up with a recipe for rack of pork. Like I said, I had never heard of rack of pork before so I was definitely in for a challenge. I love to experiment with new recipes and with the holidays at hand it is always good to have one in the hopper for entertaining, so I was very excited.
So I set out for Costco, $2.50 coupon in hand (get yours too), and found the rack of pork. They were amazing cuts of meat and the meat department staff did a great job talking to me about the cuts of meat. I was so excited to get home and get working. And Costco? It was my first time there and I can tell you that I could probably write several posts on my discoveries there alone. I am in love.

Rosemary Balsamic Glazed Rack of Pork with Roasted Vegetables
When I think of roasting meat almost always garlic and balsamic vinegar come to mind. I just love those flavor combinations and pork seemed the perfect stage for them. I was not disappointed. Not only was the flavor outstanding but the presentation was magnificent. Absolutely stunning. I decided to partner the rack of lamb with some locally grown Fall vegetables making it a presentation worthy of your finest guests.
And the cut of meat? It was not only stunning in presentation it was juicy, meaty and full of flavor. Think thick cut pork chops with twice as much tenderness and juice than a regular pork chop as they are still together sealing in the juices as they roast. I am actually considering serving this for our Thanksgiving or Christmas dinners. It was a meal fit for a king!

Balsamic Marinade Ingredients:
- 2 tbsp fresh chopped rosemary
- o.5 cups balsamic vinegar
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 4 – 6 pounds rack of pork
- 3 sweet potatoes, cubed
- 3 onions, cubed
- 3 apples, cored and cubed
Balsamic Glaze Ingredients:
- 1 cups balsamic marinade
- 3 Tablespoon brown sugar
Directions:
Marinade: In a small mixing bowl, whisk together all the marinade ingredients. Place the rack of pork into a plastic freezer bag (0r glass baking dish, covered) and pour in the marinade. Marinate for at least 3 hours.
Roast: Preheat oven to 450 degrees F. Place the rack of pork in a baking dish, season with salt and fresh ground black pepper, and pour in the marinade. Place in the preheated oven and bake for 30 minutes. Turn the oven down to 400 degrees F and roast for about 30 minutes, basting occasionally with the marinade. Briefly remove the rack of pork from the oven and add the vegetables to the baking dish (I lifted my pork and placed many of them under it for baking). Baste pork and vegetables and then return to oven to bake for an additional 45 minutes, continuing to baste occasionally, or until the internal temperature reaches 145 degrees F. Remove and let the pork loin rest for 10 minutes before serving.
{Special Note: In May, the USDA reduced the temperature guideline for pork loins, chops and roasts from 160 to 145 degrees F, with a three-minute rest. This will yield a juicy, flavorful product that may be pinker in color than most home cooks are used to. Ground pork, like all ground meat, should be cooked to 160 degrees.}
Glaze (optional): Remove 1 cup of balsamic marinade from the baking dish and brown sugar into small sauce pot over medium high heat for several minutes. Reduce heat, stirring occasionally until glaze coats a spoon, thickly. Drizzle over roast and vegetables
Freezing Directions:
Prepare the marinade as directed above. Place rack of pork and marinade in a freezer bag, seal and freeze. Prepare vegetables and place them in a separate gallon freezer bag, freeze and seal (or use fresh vegetables at time of preparation). When ready to serve, thaw (probably 2 days in advance) and continue following roasting and glaze directions above.

My father recently passed away, but right before he did all his kids(5) gathered to say goodbye. This was the first time that all the kids had been together. Since my dad passed the kids have all vowed to have family dinners, this pork recipe would be great to share at our first family dinner.

Our family tradition is to serve pork and sauerkraut every New Year’s Day with my mom, dad, sister and her family, my aunt and uncle and my family. My mom, sister and I always like just a little pork with our sauerkraut and mashed potatoes, finding the pork usually too dry, while my husband and son won’t touch the kraut. Simple roasting with simple spices like garlic, salt, and pepper. It is so flavorful on its own, it does not need much.

I would make a roast pork in the crockpot with potatoes and carrots and then use leftovers for BBQ pork.

I’m with Paula. I’d make this recipe, or invite my mom over to ‘help’ cook, because I’ve never cooked this cut of meat before. It looks wonderful though and I do love the meat from Costco. Heck, what’s not to love about most stuff from Costco:)

I don’t know how I would do it, but I love using a dry rub when I roast meat. Probably rosemary and garlic, and roast it with red onion, potatoes, and apples.

We don’t eat pork, but this recipe looks like it would taste good with chicken too.
When my in-laws come for an extended visit over the holidays, it’s not easy to come up with meals that all seven of us will enjoy. However roast pork is one of the few things we all enjoy and the rack of pork would be a great variation to serve them.

Apples/applesauce always go well with pork. I would cook the pork in the slow cooker covered in cranberries, apples, and onions.

I am an agriculture and I currently teaching a meats unit. I would smoke it on our traeger and serve it at our “carnivore cookoff”, where each student has to prepare a meat dish and do a poster on the cut of meat, where it comes from on the animal, and different cooking methods for that cut.

Every year my family has a special dinner (without extended family) Christmas eve. Every year, the menu is different. Last year it was fondue, this year is pork. Normally I would cook a pork loin but a rack of pork? A must try. I might stuff it with a pecan cranberry stuffing and an orange marmalaide glaze over the top…Yummy!!
