On vacation this week we had the privilege of stopping at a Whole Foods Market. If you have never been and run into one you really should check it out. The food is so pretty to look at. Yes, I just said pretty. They just know how to display their food to make you want to buy everything that you see. Don’t get me wrong, you might not find the CHEAPEST items there, but you will find some good food.

One of my favorite sections is the salads section. There is just so much to choose from. And it got me thinking, we need to make more salads around here. We make salads but it always is the same thing: lettuce, cheese, tomatoes, dressing. Plain and simple. I want some DIFFERENT in my life right now. So it is time for you to share once again.

We want to see some of your best salad recipes. I am talking pasta salad, lettuce salads, veggie salads, you name it salad, we want to see the recipe. If you have a recipe to share post it on your blog (or if it is already on your blog) drop the link to the post below in the Mr. Linky. If you don’t have a blog, no fear, just put the recipe in the comments below.     I’m not sure how you want these… but I’ve got an awesome recipe for a salad…

    Apple/Cashew Salad

    Salad:
    1 bunch red leaf
    2 apples – 1 gala, 1 granny smith
    4-5 oz. Swiss cheese
    4-6 oz. Honey roasted cashews
    (chicken optional, but you want it!)
    Dressing:
    ½ cup veg oil
    ¼ cup cider/balsamic vinegar
    ¼ cup sugar
    1 tbsp poppy seed
    ½ tsp mustard
    ½ tbsp lemon juice

    Mix all dry ingredients in a salad bowl. Mix dressing and serve separately.

    Here’s a delicious Tuna Pasta Salad!

    Ingredients:
    1 pkg (7 oz) small pasta shells, cooked & cooled
    1 can (6 oz) tuna, drained & flaked
    1/4 c. chopped onion
    1/8 c. chopped dill pickles
    3/4 c. mayonnaise
    1/4 c. milk
    1 T. lemon juice
    2 t. prepared mustard
    1 t. dill weed
    1/2 t. salt
    1/8 t. pepper

    Directions:
    In a large salad bowl combine the following ingredients: mayonnaise, milk, lemon juice, mustard, dill weed, salt & pepper; whisk until smooth. Add pasta, tuna, onion & chopped pickles. Toss to coat. Cover & refrigerate for 1 – 2 hours. Yield 4 servings.

    Italian Pasta Salad
    2 lb. small shells, cooked and cooled
    1/4 lb pepperoni, cut into small pieces
    8 oz of extra sharp cheese,cut into tiny cubes, could you crumbles
    1 english cucumber, diced small
    1 red pepper, diced small
    1 orange pepper, diced small
    1/3 cup red onion, diced small
    2 tomatoes, diced small
    2 bottles zesty italian dressing.

    Directions:
    In a LARGE bowl, combine the cooled pasta, and all the ingredients but dressing and tomatoes. Mix well, pour one bottle of dressing in and mix well. Refrigerate overnight. The next day, dice the tomatoes and add more dressing as needed. Chill until ready to serve.

    This is a Turkish recipe called Shepherd’s salad. It is very refreshing.

    2 medium tomatoes, chopped in tiny pieces
    1 cucumber peeled, chopped in tiny pieces
    1/2 cup flat leaf parsley, chopped
    1 fresh mild banana pepper or other mild pepper, seeded and chopped
    Optional: chopped green onions
    Toss veggies together. Drizzle liberally with olive oil; sprinkle with salt and pepper. Serve with lemon wedges.
