Here is what I read this week:
- Not a recipe or OAMM post BUT it was one of the most touching posts I have read in a long time – Immersion from Jenny at Mommin’ It Up
-Also not an OAMM post but an OAMM baby. We had dinner at Erin’s place impromptu like and Tessa and Erin’s little one started playing footsie. There are some precious feet pictured. Oh, and some great Eggplant Focaccia.
Once A Month Mom’s
- Not a Once A Month Mom per say but she does have pictures of my Tessa on this post for Eggplant Focaccia – aren’t those pictures adorable?
- Staci lists me as one of blogs you should visit. What a great Top 10 List.
Recipes (that caught my eye)
- Have you tried the Black Bean Mango Chicken Salad from the Summer 2010 Menu? OH. MY. GOODNESS. I was so skeptical when I made this. However, we devoured it like it was our last meal. My husband kept raving about it. You MUST try it!
- Island Marinated Chicken from Debbi Does Dinner. I am starting to pay more attention to who is commenting around here and I have noticed Debbi A LOT lately, she had me curious so I went over and she has some GREAT recipes, you should check her out!

And yes, I tried to tell you that the black bean mango chicken salad was wonderfulness. Addicting.
The island chickn recipe looks great! I think I’ll put it in our menu plan this week and double it to freeze a meal.
I so need to start cooking more with Mango, I LOVE it but don’t use it enough. I know I LOVE black beans so I’m sure that salad is a total winner. I’m headed over there right now to bookmark it, thanks!! :-)
