Sesame Lime Chicken Egg Rolls
While making these Sesame Lime Chicken Egg Rolls for my husband at lunch today, I told him “I don’t know why anyone would ever buy frozen egg rolls.” They are ridiculously easy to make. It took me less than 10 minutes to assemble all my egg rolls after I had my mixture put together. Plus, they are so easy to just pop a few out and put into the oven for a quick snack or lunch.
Sesame Lime Chicken Egg Rolls

Ingredients:
- 2 Tablespoons honey
- 2 Tablespoons soy sauce
- 2 Tablespoons lime juice
- 1 Tablespoon vegetable oil
- 2 teaspoon sesame oil
- 1 cup cooked chicken, shredded
- 1 cup cabbage mix
- 8 egg roll wrappers
Directions:
Preheat oven to 425. In a saucepan over medium heat, mix together honey,soy sauce, lime juice, vegetable oil, sesame oil, and cooked chicken. Cook for 10 minutes to let flavors infuse the cooked chicken, then add cabbage mix and cook another 3 minutes. Remove from heat and allow to cool. Place egg roll wrappers on a baking sheet and fill each wrapper with 2 Tablespoons of chicken and cabbage mix. Roll egg roll wrapper up tightly and place onto a baking pan sprayed with nonstick cooking spray. Bake for 10 minutes or until golden brown.
Freezing Directions:
Allow egg rolls to cool, then flash freeze. After freezing, place into freezer bags, label, and freeze. To serve: reheat in microwave for 1 minute or in oven at 350 for 7 minutes.

Sounds great! I don’t happen to have cabbage mix on hand, do you think it would work with shredded carrots and/or celery?

What is cabbage mix?
It’s a small bag of mix where the prepared salads are in the grocery store.
