Simple ‘Meaty’ Vegan Spaghetti Sauce

Spaghetti is one of our go-to foods in a house of mixed eating preferences (a vegetarian, an omnivore and two undecided kids). This simple “meaty” sauce is a favorite for all of us and is incredibly quick and easy to throw together. Having this on-hand to thaw out and serve over pasta can make busy weeknight meals a breeze (and super healthy). This sauce is also a great choice for those reducing meat intake for Meatless Monday or for Lent, as meat-eaters can still enjoy the meaty texture (and some can’t even tell the difference since it’s masked by the strong flavor of the tomato sauce).
Simple ‘Meaty’ Vegan Spaghetti Sauce

Ingredients:
- 2 cups spaghetti sauce
- 1 cup ground beef substitute (I use Lentil and Rice Ground Beef Substitute, but your favorite store-bought crumbles will work great, too)
- 1 tablespoon Italian seasoning
Directions:
Combine ingredients and heat in a saucepan over medium heat for 10-15 minutes and serve over prepared pasta.
Freezing Directions:
Combine ingredients and divide among freezer bags and freeze.
To serve: Thaw. Heat over medium heat for 10-15 minutes and serve over prepared pasta.

Just want to let you know, I found this out by total (scary) mistake that you can dehydrate the rice/lentil meat mix and make “instant meat mix”. I had forgotten that I put it in the oven and it got left in there when we left the house. A couple hours later, the hubby called me freaking out that we left it in there. I flew home and it was the consistency of granola. It didn’t burn at all, but totally dehydrated and got hard. I didn’t want to waste it all, so I put it in a bowl with water and threw it in the microwave. Cooked it for a couple minutes and let it sit covered for a few more minutes and it turned out awesome!! So now we have figured out how to make an instant, pantry friendly meat substitute!!!
