Slow Cooker Apple Cherry Pork Loin
Who doesn’t love just throwing a few ingredients together and let the slow cooker take care of the rest? This is a simple pork recipe that can be assembled and frozen to place in the slow cooker at a later date. Or, just throw the ingredients in today and have a quick, easy dinner. This is the time of year when fresh cherries start to become available and a great way to add the sweet, tart flavor. Dried cherries could be easily substituted as well.

Ingredients:
- 2 pounds boneless pork loin
- 1 cup fresh cherries, pitted
- 1 cup apples, diced
- 0.75 cup apple juice
- 0.5 cup water
- 0.5 cup onion, diced
- 0.5 cup celery, diced
- salt and pepper, to taste
Directions:
To serve immediately, place pork in slow cooker. Add remaining ingredients and cook on high for 4 hours or until pork is cooked through.
Freezing Directions:
Mix all ingredients in gallon size freezer bags. To serve, thaw. Cook in slow cooker on high for 4 hours or until pork is cooked through.

Are these sweet cherries or tart cherries?
Sweet, but I think either could be used.
Hi just wondering what I could used instead of cherries, or if it would be okay just to omit them? I have no cherries and its to late to run to the store now :(.
You could certainly just omit the cherries. Dried cherries work fine in it as well, so a similar dried fruit, such as dried cranberries would also work.
Is there an alternative to apple juice?
I used cran-raspberry in mine. I would say just about any sweet juice like cran-cherry, cherry, or something similar would work.
Instead of cooking on high for 4 hours, would I be able to cook it on low instead so that it can cook while I’m at work? How long should I cook it on low? Will it alter the pork much, do you think?

Yes you can. I would suggest 6-8 hours which is what I did when I made it recently.

Just made it (didn’t freeze, but will for another time) it is amazing! And calories vs size is great. I got.out the food scale amd was shocked at how much 6 oz is. Had with a cup of egg noodles and a cup of fresh broccoli for under 500 calories.

I made this without the cherries and it didn’t have much flavor. Do you have any suggestions for another fruit that would pair well with the apples? Do you have any other suggestions as far as spices to give it more flavor? Thanks!
You could use dried cranberries or another fruit you like. As far as spices, perhaps cinnamon.
Could I use frozen cherries in place of the fresh? I’m going to use fresh the first time, but thinking about later when cherries are in season. Thanks!!

Any suggestions on cooking this in the oven vs crockpot? The friend I am giving it to doesn’t have a crockpot big enough.
I recently did this dish in the oven myself but I can’t remember exactly how long I roasted it. I think 30-45 minutes at 350. I did check to make sure that it was at least to temperature before serving and it was thawed. It was DELICIOUS that way and I even want to say I enjoyed it more than I do the slow cooker version as it didn’t dry out as I sometimes accidentally do meat in my slow cooker.
My husband and I LOVE this recipe. It is absolutely one of the best I have tried from this website. When I first spotted this I was hesitant because I hate using pork. The first time we sat down to this meal my husband just raved the entire dinner. I’m actually making it again to take with us when we go see some friends. :)
