Slow Cooker Barbacoa Beef

This barbacoa beef feeds a crowd! It is cooked in the slow cooker, shredded and added back to the sauce to keep it moist. It is also extremely versatile. Serve it on hard or soft taco shells, nachos, or a rice bowl. It is perfect for a taco bar – just set out taco toppings, and let everyone fix their food the way they want. Great crowd pleaser!
Slow Cooker Barbacoa Beef

Ingredients:
- 4 canned chipotle peppers, including adobo sauce
- 1 medium onion, cut into large chunks
- 10 cloves garlic, minced
- 5 bay leaves
- 2 teaspoons dry whole cloves
- 1 Tablespoon kosher salt
- 4 limes, juiced
- 0.5 cup cider vinegar
- 6 pounds beef brisket or roast
- 5 cups beef stock
Directions:
Place all ingredients in slow cooker and cook on HIGH for 4 hours or LOW for 6-8 hours. Discard fat and shred meat. To serve, place meat in large bowl and ladle sauce over meat one at a time until moist but not overly saturated. Serve on tortillas, chips, or over rice with desired toppings.
Freezing Directions:
Place beef in freezer bags (it may have to be cut into 2 pieces to fit.) Mix all remaining ingredients together and pour over beef. Seal, label and freeze. To serve: Thaw. Prepare as directed above.

Where do you find chipotle peppers in Adonis at the store? I was at Kroger and asked 2 workers to help with still no luck :)
Look in the hispanic cooking section of your store. They are typically by the green chiles if that helps.
Would you say this recipe is pretty spicy?
Yes, Christy – it is. It was fine for my husband and I, but if I were making it for my kids to eat, I’d leave out the chipotles in adobo sauce altogether.
I am making this today as well! The store did not have regular beef brisket they had corned beef brisket, I hope it’s not ruined :(
