Sneaky Stuffed Potatoes

In my mind, potatoes are a top ten food because they are inexpensive, filling, and so versatile. (They make fun crafts too!) Potatoes in some form (mashed, baked, roasted, hash-browned, french fried, etc.) make it on my family’s menu multiple times each week. Vegetables, unfortunately, don’t receive the same high praises from my kids, so I’ve learned to get a bit creative and sometimes sneaky.

Sneaky Stuffed Potatoes is a recipe I created in which steamed cauliflower easily camouflages into a cheesy mashed potato mixture. And it’s a bonus that these health-ier twice baked potatoes freeze well, making them a convenient lunch item or dinner side dish.

Sneaky Stuffed Potatoes

Ingredients:

  • 6 large potatoes
  • 1 cup sour cream or plain yogurt (I use fat-free)
  • .75 cup shredded cheddar cheese #1
  • 2 cups cauliflower florets
  • 1 tsp. garlic powder
  • salt and pepper to taste
  • .25 cup shredded cheddar cheese #2

Directions:

Wash potatoes and poke a few times with a fork. Wrap in foil and bake at 350F for an hour, or until done. Cool to the touch. Slice potatoes in half lengthwise and use a spoon to scoop out potato, leaving the skins in tact. Place potato pulp in a bowl. Steam cauliflower until tender. Mash cooked cauliflower with potato pulp. Add sour cream, cheese #1, garlic, and salt and pepper. Spoon potato mixture into potato skins. Sprinkle with cheese #2.

Place in a baking dish and bake at 400 degrees for 15-20 minutes or until heated through and cheese is melted. Serve.

Freezing Directions:

Follow directions above but do not bake a second time. Instead, wrap in saran wrap and place in a gallon freezer bag. To serve: Bake at 400 degrees for 30 minutes or microwave for 2-3 minutes or until heated through and cheese is melted.

    Love the idea, but my kids don’t do baked potatoes either. I have one that won’t touch potatoes in any for other than fries. Even then he won’t touch my homemade ones done from a cold oil start (take in less oil), perfectly fried to a crisp. Those are a whole other story though. :) Thanks for the idea.

    Personally I think that potatoes get a bad rap.

    I was really curious, so I compared the two. If you compare the nutritional value of cauliflower and potatoes, they’re not that dissimilar, unless you’re eating the cauliflower raw.

    I mean this comment as a “don’t feel bad about potatoes” sorta thing.
