Strawberry Banana Breakfast Popsicles

One of my kids’ favorite children’s books is Yes Day, a story about the one day of the year in which all of the main character’s requests are granted. Pizza for breakfast? Yes. Staying up late? Yes. Picking the cereal at the grocery store? Yes.

Inspired by the book, my kids started asking to have their own “yes day.” While I believe saying “no” is definitely part of healthy parenting, I’ve realized there are way too many times I say “no” just because I’m not in the mood, it’s too messy, I’m tired, or busy. And so one day a few weeks ago we declared it our family “yes day” and I set out to grant some wishes.

Now you might as well know that just because I agreed to serve them pizza and popsicles for breakfast, doesn’t mean I went totally crazy. It’s amazing how much we moms can get away with, with a clever presentation. In fact these breakfast “popsicles” were so popular I think they’ll find their way on our menu many more times this summer!!

Strawberry Banana Breakfast Popsicles

Ingredients:

  • 1 ripe banana
  • .5 cup milk
  • .25 cup vanilla yogurt
  • 1 cup strawberries
  • 1 tsp. vanilla

Directions:

Blend together ingredients in a blender. Pour into popsicle molds or plastic cups and freeze.

Freezing Directions:

Freeze until ready to serve.

Servings: approx. 4 popsicles
