Sugar Free Fat Free Mocha Popsicles
Summer doesn’t even begin for another 2 weeks, yet we are well into the 90′s at my house. Nothing beats the heat better than a yummy popsicle. Add a little coffee for a grown up kick and you have a yummy, super low calorie treat. I have found that fat free or low fat evaporated milk will substitute for the richness of cream in most any recipe. It’s a super sneaky way to keep the texture and flavor of cream without all the fat and calories.
If you want to make these for your kids, you can leave out the coffee, double the milk and use 4 Tablespoons of sugar instead of Stevia if you prefer. They are also delicious with 1/4 tsp of peppermint extract for a chocolate mint popsicle.
Sugar Free Fat Free Mocha Popsicles
Ingredients:
- 2 1/2 cups brewed coffee
- 2 packets of Stevia or other sweetener
- 2 Tablespoons unsweetened cocoa powder
- 1 cup fat free evaporated milk
- 1/4 tsp vanilla extract
- Pinch of salt
Directions:
Blend all of the ingredients together in a bowl. Pour into popsicle molds and freeze completely, about 6 hours. Dip molds briefly in hot water to release.
