Summer Chicken Salad
I was having a friend over for lunch this week and decided to I had all the ingredients for my chicken salad. And I realized I had never posted the recipe here. Interesting. Well, one thing led to another as I was preparing it and I decided to get all fancy with it.
It is a great summer chicken salad with a burst of sweetness from the grapes and explodes with color if you use the red variety. It is so easy to make that you can whip it up in no time for lunch. But it is tasty enough that you can dress it up in some crescent roll bowls and serve it at a baby shower or for entertaining. Perhaps even for a summer picnic!

Ingredients:
- 2 lbs chicken, cooked and shredded
- 2 ribs celery, diced
- 1 cup grapes, halved
- 1 teaspoon poppy seeds
- 1 teaspoon garlic salt
- 1 cup mayonnaise
- (optional) crescent rolls
Directions:
If you so desire, preheat oven to 350 degrees for crescent rolls. Spray the muffin tin and spread a crescent triangle in each cup. Bake according to package instructions, approximately 12 minutes. Allow to cool. In a large bowl place all ingredients except crescent rolls. Mix together. Once crescents are cooled, spoon in chicken salad. Serve.
Freezing Directions:
Mix all ingredients except mayonnaise. Freeze. To serve: Thaw. Mix in mayonnaise. Serve.
Servings: 4-6

This looks so yummy! I love grapes in chicken salad. You may have mentioned this elsewhere on the site, but I’m still new around here so haven’t noticed it yet; what way would you recommend cooking the chicken for this recipe? I’m guessing you’d use leftovers from something, is there’s a good recipe to use in order to have some leftover for things like this?

This is the best chicken salad ever! I wasn’t sure how well it would go over with my husband and six kids, but I was told (yes, told!) by all of them that I HAD to make it again! I was surprised how the garlic powder that I used really added something to it. Thanks for the great recipe!

Ok, so you can freeze the grapes and they won’t be all squishy after you stir in the mayo?
well, they might get squishy. If that texture is an issue to you (me too) you can leave them out until the time of preparation.
