Tacos in a Sleeping Bag (Kid Friendly)

I was recently looking over some comments on the OAMM Facebook page, and noticed some requests for more kid-friendly ideas. I hear ya, because sometimes mealtime can be a challenge at my house with my own three picky little eaters.
I created these simple meat-filled rolls one day when I was experimenting with the previous night’s dinner leftovers. My skeptical-to-new-foods-five-year-old wanted to know what I was making and I quickly called them “tacos in a sleeping bag.” Amazingly, giving the dish a really cool name was all I needed to win over the hesitation and I became the coolest mom ever. The “tacos” have become a favorite at our house and I especially love the convinence of freezing a batch to have on hand for quick lunches.

Ingredients:
- 2 packages refrigerated crescent roll or biscuit dough
- 1 lbs. ground beef or turkey
- 1 package taco seasoning
- .5 cup cheddar or mozzarella cheese, shredded
- shredded lettuce, tomatoes, sour cream, etc. if desired
Directions:
Preheat oven to 375ºF. Brown the ground beef or turkey in a skillet. Drain in a colander and rinse well in hot water to remove grease. Return to skillet. Add taco seasoning; mix well. Unroll crescent rolls or biscuits. Top each piece of dough with approx. 2 TBSP taco meat and a sprinkling of cheese. Roll crescent roll around filling (fold over and pinch edges to seal if using biscuit dough). Place on a baking sheet at bake at 375ºF for 12-15 minutes or until golden brown. Serve with shredded lettuce, chopped tomatoes, and a dollop of sour cream, if desired.
Freezing Directions:
Follow directions as above. When finished baking, allow to cool completely then flash freeze on a cool cookie sheet. When frozen, place in a gallon freezer bag. To serve: Heat frozen taco rolls in microwave for about a minute or reheat in the oven until heated through.

we do something similar, browned meat mixed with cheese, wrapped in a biscuit. No taco seasoning and we call them suprise burgers. I have never tried freezing them.
Love to see the kid friendly ones, we are so bored with lunch this will help.
What a fun recipe! I think you’re right about the cool name factor! We don’t have kids, but the 5 year old that I often am is completely intrigued by this — while the 28 year old shouts NOM NOM NOM! Thanks for linking this up to Friday Potluck!
Tricia, this is such a smart idea! Annalyn likes tacos, but she just eats bits and pieces of all the ingredients. This would be easier – and neater!
Very fun! So true about the name of it!
Loved this. I made them using refrigerated pizza dough and they looked Iike Hot Pockets. I also used lentils in place of half of the beef. The kids (5 and 7) did not even notice the lentils. My husband? Not so easy to dupe:)
yummmm… thanks for mentioning lentils… reminded me that I have a package of madras lentils in my cupboard that will definitely be added to the recipe.

Do you think you could flash freeze these before baking so they taste fresh when baking them as needed? Or would the sauce from the taco meat ooze out?
I really like these ideas. I’m always short on quick lunches.
I *think* that would work but haven’t tested it. If you would like to test it and let us know that would be great!
Those sound so good! And maybe easier for a toddler to eat? Thanks for joining Tasty Thursdays. :)

great farmer’s meal too! what type of baking sheets are these?
Has anyone tried these with Bisquick biscuit dough rather than premade refrigerated biscuit dough for a cheaper version?
Help! What did I do wrong? I reheated a sleeping bag and put it in my daughter’s lunch. She said it was VERY soggy. Thinking I need to let it cool before sealing it up in a container maybe?
Made with Immaculate Baking Co. crescent rolls and ground turkey! Yum!
SERVE with lettuce and tomatoes? Are you kidding? What kid would eat the serve with? Why bother? :)
Well one can hope right Patti? It does say “if desired”.
