I have been diligently trying to come up with recipes that can be frozen in small portions for my toddler to have for lunches. It turns out that these make a great lunch for him or a side dish for dinner!

This Italian dish of Mozzarella, balsamic vinegar, tomatoes and basil will be just what your taste buds are looking for in a fresh and tasty salad or side dish.

My husband is somewhat of a Sandwich Mistro. This, by far is his favorite creation to date.

I can’t exactly say where the origin of this recipe came from. My mom use to make it for dinner and it made it into my “have to have” recipes pile when I moved out. I love the combination of flavors. It is an ingredient combination I would never have thought of on my own or thought I would enjoy. But we love it.

These are a great summer time lunch item and can be frozen for those eating on the run days (or for packing in lunches). They will likely best be reheated in the oven to maintain crispness but can also be reheated in the microwave when you are in a hurry.

My aunt makes these yummy potatoes for family functions that are amazing.

This is a fairly simple recipe that you might find just about anywhere. But we thought we would tell you how we do it here in the Callahan household. My husband particularly likes these during the summer for a quick and easy meal. The kids will love them too.
