I adapted one of my favorite, and simple, lasagna recipes to work with the Down Home Spaghetti Sauce. We gave it a try and it was just as delicious. And the great part is that it is so simple!

We love the Chicken Parmigiana recipe so much that I thought I might experiment with different “meats”. We had received an eggplant in our latest Happy Box and I didn’t want it to go to waste. So I converted the Chicken Parmigiana recipe in to Eggplant Parmesan.

You can most definitely serve them as meatballs with the spaghetti sauce but we loved them atop of sub buns, melted with some Mozzarella and served as Meatball Subs!

This more traditional spaghetti sauce is so rich and hearty that your family will be coming back for seconds. It is also BEST when it is frozen or sits for a day or two!

This recipe is so simple and quick to make. It might even be so simple it shouldn’t be a recipe. It is great for a slow cooker or pressure cooker.

My aunt always made this yummy casserole for her granddaughter Kaylee that I loved. Turns out it is super simple too! I like that even more! It is a very kid friendly recipe as well.

I can’t exactly say where the origin of this recipe came from. My mom use to make it for dinner and it made it into my “have to have” recipes pile when I moved out. I love the combination of flavors. It is an ingredient combination I would never have thought of on my own or thought I would enjoy. But we love it.

The Happy Box last week included a lot of hearty summer vegetables along with a mango. I had chicken in the freezer that needed to get used up and I was inspired by the Mango Pico De Gallo on Our Best Bites. So I took to experimenting and came up with this dish.

This hamburger recipe came directly from a Friday FORGE lunch. They have a bit of a kick to them so if you have young ones you may want to omit the buffalo sauce on some.

These hamburgers have a great taste throughout. I love that you don’t have to worry about the bacon falling of the top or the burger falling apart when you are trying to eat. And you did see they had BACON, right? Can you really go wrong with bacon?

This is a great tasting meatloaf. It isn’t your standard meatloaf which is what appealed to me. I like trying new things, or old treats in new ways. It is easy to make and easy to freeze.

These burgers are really SUPER yummy. I took them to my husbands work to get a real taste test. They passed with flying colors. Many a compliment. And these men know food.

One of my favorite seasonings packets is the Lipton Savory Herb & Garlic Seasoning. I also have several pork loins that need to be used up so I threw this dish together. I think that you will like it. It is simple but very juicy.
