Tis the season for end of the school year activities! Having a menu plan for my week means that I don’t have to try to figure out what is for dinner on a busy night with all the other crazy activities going on.
What a crazy busy couple of weeks coming up! We have the school year ending in two weeks, and there are a flurry of activities associated with that: field trips, volunteer breakfast, field day, end-of-the-year party, etc. . .
In a few short weeks, my stepdaughter will be graduating high school, which means that our schedule until then is even more hectic than normal. We will of course be relying heavily on eating meals “from the freezer” for not only our family suppers, but also daycare toddler meals and snacks.

Spring has arrived, and this means lots of outside playtime for the kids! It also means our meals become quicker, lighter and we do a lot of grilling!
Our (Kristi’s) family had a bit of a family emergency this month, so the kids and I packed up to visit Grandma. This sent our menu plans into a bit of a tizzy since my mom isn’t quite as far along the Get Real spectrum as we are at our house. I’ll admit I get a little mopey every time I speak to my husband over Skype…and not just because I miss him, but also because I can see my beautiful stand mixer and food processor in the background.
We are heading out of town on a road trip for spring break with the family, so my menu plan needs to be flexible.
The solutions that bring me sanity are keeping prepped meals in the freezer, and pre-planning our weekly meals.
This weekly menu plan also includes toddler lunch and two snacks for the children in my in home daycare.

Re-entry from vacation can be difficult, thank goodness I planned and cooked ahead using the Mini Menus, so I didn’t have to worry about cooking in-between the loads of laundry!
For our meals this week I’m trying to use up items that I already have in the fridge, plus looking forward to an at-home date night on Friday.

Our family is following along with Get Real this year and we’re making great progress so far. It’s pretty exciting and, as we’ve discovered, an even tastier experience than we expected. This week’s vegetarian menu plan includes Pumpkin Black Bean Enchiladas and Baked Seitan Pepperoni Pizza.
This week is a big fun one with a day off from school, a birthday, XC ski meets and sleepovers. Having a menu plan helps everything move smoothly even when you are having fun!
Back into the full swing of things in our house! Big kids are back at school, and daycare kids are returning to their normal schedules……ahhhh….can you hear this mom’s huge sigh of relief? I am gearing up for a OAMM cooking day, so trying to clear out my deep freezer and my fridge freezer of things that need to be eaten!
