This recipe is so simple and quick to make. It might even be so simple it shouldn’t be a recipe. It is great for a slow cooker or pressure cooker.
The Happy Box last week included a lot of hearty summer vegetables along with a mango. I had chicken in the freezer that needed to get used up and I was inspired by the Mango Pico De Gallo on Our Best Bites. So I took to experimenting and came up with this dish.
So when I am down and out and can’t find anything to fix for dinner (or just plain don’t feel like any of the meals in our freezer) this is what I fix. If you are looking for something fast and easy for dinner tonight, this is a simple and great solution!
My former co-worker Melissa was FAMOUS for this veggie pizza. She would bring it in for most of our carry in’s at the office and it was gobbled up in minutes. Okay, it took us like an hour, but it is so good! I tested it out and it turns out it freezes well too. So she gave me permission to share with the rest of you. Enjoy! Great for holiday gatherings.
