Tangerine Dream Smoothies

 

Buying seasonal produce is a wonderful way to save money and still stock your refrigerator with healthy food. February may seem like a lean month when it comes to seasonal produce, but tangerines are still going strong and will through April. This dreamy smoothie will start (or restart) your day with healthy fats, vitamin C, nutrient packed greens, and omega-3 and help your body to stay strong through the rest of the cold and flu season. Tangerine Dream Smoothies

Ingredients:

  • 2 tangerines, peeled and deseeded
  • 1 medium banana
  • 2 cups fresh baby spinach
  • 13 ounces coconut milk
  • 1 Tablespoon chia seeds

Directions:

Place tangerines, banana, spinach, and coconut milk in blender and mix until smooth. Stir in chia seeds (do not blend put seeds in the blender).

Freezing Directions:

Divide into portions and freeze in bags. To serve: Thaw mixture in the refrigerator overnight. Serve cold or stir together with crushed ice if desired.

Servings: 2

    My family and I are very into smoothies right now (even bought a juicer from Aldi so we can use fresh juices as ingredients). This one sounds delicious – and I’d never considered freezing them. I much prefer this option to the brainfreeze that results when, in a desperate move to curtail waste, I drink all the leftovers whenever I make too much. Thanks for sharing.

    Any ideas for a banana substitute? I am allergic but I find when I just leave them out the texture isn’t right. Thanks.

      Avocado has a similar texture to bananas in smoothies, but they aren’t as sweet. You could also add some plain yogurt to make it thick and creamy without banana.

      I don’t care for bananas and I use frozen peaches in my smoothies instead.

    Do you need the chia seeds? I was going to make this for my little ones, just didn’t know what the added value of chia seeds would be to them?

      Chia seeds are great GREAT for kids, because they are full of omega-3s (good for growing brains!) If your kids have a hard time with the texture, you can blend them in the blender with the other ingredients. But if you really don’t like them, you can leave them out.

    Can I place the ingredients in baggies to freeze (freezing the coconut milk in ice cube tray) instead of blending first?

    I make a green smoothie every morning. I never knew you could freeze them. That will make my life my simplier. I can’t wait to try this. I think I may need a larger freezer.
