Time to Vote: September Dinner Poll

This was such a yummy line-up, I don’t know how you are going to choose! Whether you just made part of the menu or the whole thing, come tell me what you (and your family) thought of the September dinners.
Here is what was on the September Dinner menu:
- Deconstructed Broccoli and Cheese Stuffed Chicken Breasts
- Ultimate Beef Stroganoff**
- Baked Ziti
- Mexican Cornbread Casserole
- Chicken Marsala
- Chicken & Chilies Casserole
- Parmesan-Paprika Pork Chops

Ok, I didn’t make the Chicken Marsala or the Parmesan-Paprika Pork Chops, so I’ll just talk about the others.
The only one we weren’t too fond of was the beef stew. If I made again, I would NOT add any of the brown sugar. The sweetness was just too weird for my family. The broccoli cheese chicken breasts were PHENOMINAL!!! SOOOOO GOOD!! I gave a pan to some friends (wife just had surgery) and they raved! Definitely adding that one to my regular meals list. The stroganoff was also good. Very simple and quick.
My husband is one of those men that needs meat in every meal. So for the baked ziti I added 3 lb. browned ground beef, 1 large bell pepper (chopped), a little more tomato sauce (all that meat made it a little think) and some extra cheese (I’m a cheese-aholic). My husband raved! This recipe is also going on my reagular meals list.
The Mexican Cornbread casserole was really good, but took a lot longer to cook than stated. Partly because I added an extra box of cornbread mix like was suggested on the original recipe site. I also added more cheese after it had cooked a while. I’ll be making this again.
The Chicken & Chiles casserole was really good. I used one can of regular rotel and one can of hot rotel. VERY spicy!! My son wouldn’t eat it (he’s 2, likes spicy, but this was way too much for him), but my husband and I both liked it. We mixed in some extra cheese and a good dollop of sour cream to help with the heat. I worked. I’ll probably make this again, but with 2 cans of regular rotel.
Overall, our favorites were the broccoli cheese chicken breasts, ziti, stroganoff, and cornbread casserole. In that order. This was a GREAT month of menus!!! Thanks for all your hard work Tricia!!!
I made 4 of the September Dinners:
- Ultimate Beef Stroganoff: It was okay. Not very “ultimate” because I’ve certainly had better. I thought it needed a lot more mushrooms, like 3 times as many. It needed more flour too, but maybe that’s because of the extra mushrooms I added one of the times we ate it. I have another recipe where the flour is mixed into the sour cream right before serving and I like that better than using the apple juice with the flour.
- Baked Ziti: Needed more sauce for that amount of pasta, but other than that it was fine.
- Mexican Cornbread Casserole: Yummy! I will definitely make this again.
- Chicken & Chilies Casserole: Surprisingly, I liked the cumin in this. It’s not one of my favorite spices. I liked it well enough that this recipe under consideration for my leftover Thanksgiving turkey.
I made all the September dinners, but we haven’t tried the deconstructed broccoli and cheese stuffed chicken breasts. As for our favorites…we are a house divided. The Chicken Marsala & Chicken/Chiles casserole are my favorites! My son loved the beef stew!
