Toddler-ific Pizza Snack Cups

Since these pizza cups use a refrigerated biscuit for the base, they are super simple to throw together for a snack.  I made these after the kids went to bed one evening and they made the kitchen smell so good that I just had to try one.  They tasted as good as they smelled.  They freeze really well also, and are simple to pop in the microwave for a quick snack.  For my toddlers, they also make a nice quick lunch item.

Pizza Snack Cups

Ingredients:

  • 2 16-ounce cans refrigerated biscuits (8 biscuits in each can)
  • 1/2 pound ground beef
  • 8 ounces pizza sauce
  • 2 ounces mozzarella cheese, shredded

Directions:

Preheat oven to 375 degrees.  Using a non-stick muffin pan, press a biscuit into bottom of each muffin cup and up the sides of the cup to make a well in the center.  In a skillet, brown ground beef until done and drain.  Stir in pizza sauce.  Spoon a couple of tablespoons of sauce into each muffin cup.  Bake for 15 minutes.  Sprinkle each cup with cheese then bake an additional 5 minutes.  Allow to cool slightly before removing pizza cups from muffin pan.

Freezing Directions:

Cool completely and transfer to gallon freezer bags.  To serve: heat in microwave until heated through.

Servings: 16 pizza cups

    My mom has always made something just like this (and now so do I) with ground beef, BBQ sauce, brown sugar, and cheddar cheese called BBQ Jackpots. I have never thought about a pizza version or about freezing them. Thanks for the recipe, I will definitely have to try it!

    Well, there are no toddlers in this house, but I’m sure that both my husband and I would enjoy these. I think they would be good to take to work for lunch. Refrigerator biscuits are one versatile product. It’s great that they freeze well, too. I think I would also enjoy the barbecue version Kayla mentions. Thanks for sharing.

    Would this work with the garlic knots/pizza dough?

      While I haven’t tried this recipe with a pizza dough base, I see no reason why it wouldn’t work. If I were attempting this substitution I would allow the pizza dough to rest for 2 hours as described here: Homemade Pizza Dough. After the dough has rested, divide into 16 pieces. Form each piece into a disc-like shape and continue with the recipe above. If you try this, I would love to hear how they came out!

    I do the same thing with taco meat too. Great for scout night when we have to get homework done and back out the door quickly. They pack great in lunches too – something different from PB&J :)

    These also make a great party finger food! I made some with pepperoni and some with sliced black olives for my son’s birthday party and figured I would freeze the leftovers for him – except that only three were left by the end! Thanks for the great recipe!

    I use leftover sloppy joes to do this and top with american cheese. I put the biscuit in the cupcake pan, top with meat, any extra veggies, and cheese, then freeze. Once frozen you can take them out and individually wrap and put in a large ziploc bag. :-)

    These sound really great and would be a great way to disguise veggies if you have a toddler that won’t eat theirs, like I currently do. My little one loves pizza and just about vegetable covered with cheese, pasta sauce, or meat will get eaten. Great idea! ;)
