TRADITIONAL April 2011 OAMM Menu (OAMC, Once A Month Cooking, Freezer Cooking)

cooking-link1Nope! This year I am NOT playing an April Fool’s joke on you like last year. This is the real deal! In fact, I am excited that this is the FIRST month that Pam is flying solo on a menu. I think that you will find that her menus look very similar to choices I would make myself.

Ham, Broccoli & Cheddar Roll

Easter falls in April this year so you will be seeing ham, baked goods, eggs and all those other Easter staples on sale this month. You will also start seeing fresh Spring produce appearing. Asparagus, strawberries, pea pods, mushrooms and the ever present broccoli. Yum!

We are also making the transition of starting to offer meals that you can make on the grill. Oh the grill, how I love thee!

Again, enjoy!

I hope you enjoy these meals as much as our early readers/cooks have. If you are new and not sure how to get started, read here. For frequently asked questions visit here. And there are several other helpful links under the Helpful Hints/Resources section below to help you on your cooking journey. Good luck!

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! Here is a little bit about this month’s test cooks:

  • Leana Seabolt – I’m a busy girl! I am truly blessed with a wonderful husband and three beautiful children (12, 6 and 2). I have a full time job with an hour commute (each way!). We have two horses, two school age kids with homework every night and did I mention a 2 year old? That doesn’t leave much time for cooking, so OAMC works well for us… and OAMM rocks!! I also blog at Sweeties Kitchen Adventures.

What do you think of April 2011’s menu?

If you are feeling abundantly blessed and generous feel free to donate. :) But don’t feel guilty if you aren’t able. And don’t forget you can always go back and use April 2009′s OR April 2010′s menus if you are looking for something different!

Tricia, Loved the artichoke bread – took it as an appetizer for a farewell party and there was NONE left over!! Always a sign of a hit. Will be making this as the appetizer for Bunko at my house this week, think I’ll make two, one for us and one for the freezer. Posted in on my blog as I was asked for the recipe at our dinner. :)

I notice that none of these meals have ** on them to let us know that there will be no actual cooking on the big day, does that mean that ALL of these meals require some sort of cooking on the big day?

Cooked this menu yesterday and can I just say YUM!!! Very excited to be eating all this yummy food all month. :) We ate the broccoli cheese soup for dinner last night, very tasty. I did want to mention that the number of heads of broccoli is WAY too many – you definitely don’t need one head to yield one cup of broccoli – unless our broccoli heads here in Georgia are just exceptionally large, LOL! Also, had onions left over. . . just some helpful hints from my experience. .

    • Tricia says:

Great! As for the broccoli, in some seasons and regions broccoli is definitely bigger and yields greater amounts. I go with the amounts I have gotten on Sliced & Diced posts (Broccoli) as a standard. But yes, I do expect there are variations from person to person.

Hi! We have scheduled our Big Day for Friday, and tomorrow (Thurs.) is our shopping day. I did find the HALF menu instructions, and found where you told me to look for the HALF menu column on the grocery list. Now I’m having trouble with the actual recipes. Should I still be looking in the HALF column on the recipe cardds, too? Because if I follow that, I will be getting 1 quiche, 2 French toast casseroles, and 2 bags of waffles. I thought it was 10 breakfasts? So, am I reading it wrong, or am I actually supposed to do the FULL column on the recipe cards? Also, sorry to bug you, but is there a way to print all the recipes as one document, or do they have to be one per page? Thanks so much. We are really excited and grateful!

  8. Jpro says:

P.S. I’m also just looking at the list of containers needed from the Half menu grocery list. It shows that I will need 25 containers, but I should be getting 40 meals (15, 10, 10). Ack! Please explain, b/c I’m really confused at this point. Half menu means the same number of meals, but only for one family, right? So if we were doing the FULL menu w/ another family, we would technically be cooking 80 meals at a time. Right? What am I missing? =( (You can combine my last two comments if you want)

    • Tricia says:

The containers should be correct. Like explained below, the amounts vary from month to month. The other consideration is that some containers will hold more than one serving of an item. For example, you will likely get several lunch servings in one bag of the Tacos in a Sleeping Bag, etc. I am working on a video explanation of the videos that should help. I hope to have them posted in the next few weeks. Until then, I would say go with what the documents say and see what you get and how it feeds your family. I think you will be quite pleased and it will all come together to make complete sense.

I missed the label for the teriyaki chicken….

We’ve made bulk recipes of our own dishes before, but this was the first time we’ve used someone else’s plan. Thank you so much for putting this together! This site is amazing. We did our first bulk cook this past weekend and I’m looking forward to eating all that we made!

  11. Stephanie says:

Is this where we’re supposed to post errors? I just spent a lot of time consolidating the recipes to double check the grocery list and found many (approx. 13) problems with the grocery list. I’m surprised nobody else noticed…they would have been quite obvious come cooking day.

I was thrilled with the March menu (which was my first) but am behind the proverbial eight ball with April. Plan to make it this weekend but printed off all the recipes/shopping list weeks ago so have most of it purchased. Where do you post any errata? How do I know that corrections have been made? Do I need to re-print everything off? (I’m very appreciate of this site btw!!)

        • Tricia says:

If there are errors indicated in the comments below then I have corrected them. I don’t publish until the corrections are made, but want to be honest that there are sometimes mistakes. I would check what you printed with the current documents and see if there are differences. If there are, you will likely need to reprint. Sorry.

  12. Emy says:

Just printed out the labels for this menu and don’t see the ones for the Teriyaki Chicken (I think the beans are missing as well and perhaps others). Just wanted to let you know!

Hi, I new to your web site, I like what your doing and would like to try it out. I am not that good with a
computer. i tryed changing the number of the people i want to cook for on the grocery list, but i can never get it to change. Could you help me with this problem?

    Thank you – Beverly McDonough

  14. Nina says:

I would like to start with the April menu. It has more of what we will eat than the dishes on the later ones. I see that the Half Menu is for 1 family of 4. We are a family of 2. Can I just half the half menu and will everything work our right? It seems logical, but I have never done this before.
    Thanks!

I have a quick question … I am new to the site and just started checking out all of these great recipes and ideas. I plan to start up some cooking this weekend to try it all out. The French Toast casserole do you mix all ingredients and then put in a dish and freeze or do you just bag the ingredients and put in dish along with milk and eggs when your ready to cook ?? Sorry I am still a newbie!
